为什么火锅一个锅会分成九个部分呢?这当然不是因为一个锅里有九个味道。

而是因为分出九个部分,每一个格子的火候各不相同,下锅煮的食材也各不相同。不得不说中国人对吃真的非常讲究!

中心的格子可以放毛肚、鸭肠、黄喉、肥牛,用来烫容易熟的肉类,火旺油温高,滚烫30秒让食材口感爽脆。旁边的大格可以下锅煮香肠、麻辣牛肉、海带、金针菇、藕片、土豆、莴笋、肉丸、鱼、虾滑等需要煮一段时间才能完全熟的食材。边上的小格可以煮鹌鹑蛋、鱿鱼、肥肠等等,起到一个小火慢慢煮,使得食材更软糯,完全入味的作用。
