今天做的芋泥麻薯肉松贝果芋泥控必做 !这个搭配真滴太香啦~外皮酥脆内里馅料丰富,一口下去绝绝子~面团95克左右馅料我放了50克自己做主打一个满满当当,而且一个都没有爆开哦~馅料切记不要太湿干一点真的不会爆!做法简单也没啥难度新手小白都可以做~

软糯拉丝芋泥麻薯肉松贝果❗️做法简单的做法

  1. 先提制作波兰种100克水➕1克酵母搅拌均匀加入100克高筋粉室温发酵1小时至2.3倍大(夏天发的快具体时间请根据自己的室温温度调节两倍大就可以用了)

  1. 麻薯做法:糯米粉60克➕玉米淀粉10克➕牛奶130克➕15克糖搅拌均匀过筛后倒入碗中盖上保鲜膜用牙签扎几个孔上锅蒸20-30分钟~蒸熟后放温热加入10克黄油

  1. 戴手套操作上手揉至吸收后反复拉扯至能拉很长就行了,包上保鲜膜备用

  1. 主面团所有食材全部放入厨师机中(水量仅供参考不要一次性加进去,觉得干再慢慢加水)

  1. 搅拌成光滑的面团

  1. 接着分成7个圆球盖保鲜膜松弛15分钟(天气热我是冰箱冷藏发酵的)

  1. 趁着面团松弛把馅料分一下,芋泥馅搓成20克一个的长条,麻薯也是20克一个(麻薯底下铺上层保鲜膜不然会粘)

  1. 取一个面团拍扁

  1. 稍微搓一下搓成20厘米左右的长条,一头擀成扇形把另一头包进来

  1. 全部整形好我直接室温发酵的28度发酵了20分钟(天气热不用烤箱发酵也行冬天不行哦)

  1. 锅中放入500克水➕30克糖,煮开后转小火至底部微微冒泡的状态放入贝果正反面各煮30秒捞出控干水分放入烤盘

  1. 烤箱上200度下190度18分钟
