这时候面团发酵好了,体积明显大了一倍,里面蜂窝组织可丰富啦,这就说明发酵好了。把面团取出放在撒有干面粉的案板上,揉面排气,把面团中的气泡全部揉出去,揉至面团表面光滑,恢复到原来大小,再搓成细长条,切成大小差不多的小剂子,每个剂子大概 50 克左右,表面撒点干面粉,取一个面剂子,用擀面杖擀成中间厚、边缘薄的圆形面皮,注意不要擀得太薄,不然包子容易露馅。
用勺子舀适量放凉的酸菜馅料放在面皮中央,然后开始包包子。从面皮边缘开始,一边捏褶一边转动面皮,最后收口,捏紧,一个包子就包好了。再简单团一团,整理整理形状,然后放进蒸锅,先别开火,再醒发 20 分钟。
