制作步骤:

1.花椒用小半碗温水,浸泡15-20分钟,泡出香味后,滤掉花椒粒,得到清香的花椒水。

3.酸菜用清水冲洗2-3遍,去除表面多余的盐分和杂质,再攥干水分,略微保留一点点湿润感。酸菜先切成细丝,然后再仔细地切成均匀的碎末。

4.锅中倒入比平时炒菜多一些的食用油,放入切好的葱段、姜片、八角和几粒花椒。开小火,慢慢加热,将葱姜和香料的香味充分炸入油中,直到葱姜变得焦黄干香。

5.关火,用漏勺捞出所有料渣,得到的金黄透亮的葱姜香料油,晾凉。酸菜末中,先淋入一部分放凉的香料油,轻轻拌匀。

6.拌好油的酸菜倒入已经打好水、调好味的肉馅中,加入切得细细的大葱末和生姜末,酌情加入适量的盐。出锅前,淋入1汤匙香油,将馅料充分搅拌均匀。

7.中筋面粉中加入一小撮盐,分次加入约240-260毫升的温水,边加水边用筷子搅拌成絮状。揉成一个初步光滑的面团,盖上湿布,放在温暖处醒面至少30分钟。

8.醒好的面团取出来再揉几分钟,揉至表面非常光滑细腻。然后搓成长条,切成大小均匀的面剂子,撒点干粉防粘,用手掌压扁,再用擀面杖擀成中间稍厚、边缘略薄的圆形饺子皮。

9.包饺子,无论是经典的元宝形、可爱的月牙形,还是你自创的独家造型,怎么喜欢怎么来。

10.锅中加入足量的清水,大火烧开。水沸腾后,下入包好的饺子。用漏勺轻轻推动几下,煮至水沸腾。淋入小半碗凉水,再次盖盖煮开。重复2-3次,饺子都鼓鼓囊囊地浮在水面上,可以捞出享用啦!
