准备食材:猪小排一斤左右,海带半斤,葱一段,姜几片,八角两颗,香叶三片,花椒一小撮,干辣椒两个,生抽两勺,老抽一勺,蚝油一勺,料酒一勺,白糖一勺,食用油适量。

第一步,把买回来的猪小排剁成段,然后冷水下锅焯水,加入少许的料酒去腥,水开后撇去浮沫捞出备用。

第二步,海带提前用清水浸泡两个小时以上,泡发以后清洗干净切成菱形块。

第三步,在锅中倒入少许的食用油,油热以后放入拍散的大蒜和切好的葱花爆香,接着放入处理好的排骨,翻炒至表面微黄。

第四步,把准备好的调味包放入锅中,再依次加入生抽、老抽、蚝油、料酒和白糖,翻炒均匀上色。

第五步,往锅中加入没过食材的热水,大火煮开以后转中小火慢炖半小时。

第六步,半个小时过后,加入泡好的海带,再继续炖煮半小时,期间要时刻注意汤汁不要收干,以免糊底。
