食材准备:

新鲜鸡胗、鸡心250g;酸笋50g;野山椒10颗;泡姜3片;大蒜4瓣;小米辣3根;生抽2勺;料酒3勺;淀粉1勺;白胡椒粉半勺;白糖少许;香醋1勺;郫县豆瓣酱1勺。

制作步骤:

1.鸡胗撕去表面筋膜,鸡心剪开冲洗血水,统统放进盆里,撒上2勺盐和1勺料酒,搓出黏液后,用清水冲净。

2.锅中烧开水,放入鸡杂,加1勺料酒、3片姜片、半勺花椒,大火煮10秒。看到鸡胗卷曲,立刻捞出,过冰水冷却。

3.鸡胗切成薄片,鸡心对半切开。锅中放3勺菜籽油,油热后下蒜末、泡姜片、野山椒段,小火炒出香味,再加入1勺郫县豆瓣酱,炒出红油。

4.倒入酸笋,翻炒20秒。接着开大火,倒入鸡杂,快速翻炒,沿锅边淋入2勺料酒,听到“刺啦”一声,腥味随着酒气一起蒸发。

5.加1勺生抽、半勺白胡椒粉、少许白糖提鲜,翻炒均匀后,撒入小米辣圈和葱花,爆炒入味。

6.关火前,淋入1勺香醋——这勺醋要“锅边炝”,沿着热锅边缘倒入,高温激发出酸味。大约30秒,看到鸡杂裹满红亮的汤汁,此刻立刻关火装盘。
