准备一个大点的盆子,倒入 300 克普通面粉。南瓜去皮切片,上锅蒸熟。趁热加入 20 克白糖,再倒入 90 毫升温水,然后把南瓜泥倒进来搅拌均匀。
接着打入两个鸡蛋搅散,放一边晾至温热。然后把鸡蛋液倒进面粉里,下手揉成光滑的面团,盖上保鲜膜发酵至两倍大。
趁着这会咱们来做点缀用的胡萝卜花。一根红萝卜洗净后切成薄片,再对角切成三角形,这样漂亮的装饰花就做好了。
等面团发酵好以后,里面是蜂窝状的,用手按压一下,回弹力特别好。案板上撒些干粉,把面团放在上面,不用揉,直接从中间分一半出来,取其中一份搓成长条,切成大小均匀的小剂子。
然后取一个小剂子,左手拿着剂子,右手揪一块下来,把它搓成圆球,压扁,边缘捏薄一些,包入一点刚才做好的胡萝卜花,收口朝下摆放在盘子里,依次做好所有的南瓜饼胚,盖上保鲜膜静置 10 分钟进行二次发酵。
这个时候咱们就可以来准备开火了,锅中加入足量的清水,大火烧开后,放入南瓜饼,中火蒸 15 分钟关火焖 5 分钟即可出锅。
你看这蒸出来的南瓜馒头,个个又白又胖,还散发着浓郁的南瓜清香,夹杂着淡淡的蛋香味,咬上一口,软糯香甜,真的好吃到哭!
