中筋面粉:300克

清水:约150毫升

食盐:小半茶匙

油泼辣子:

干红辣椒面:2大匙

花椒粉:半茶匙

蒜末:3瓣

葱花:2根

植物油:4大匙

盐:小半茶匙

生抽:1小匙

配菜:

黄瓜丝

豆芽

香菜

制作步骤:

1.面粉倒入盆中,一边加水一边搅拌,直到所有面粉都润湿了。揉至表面光滑,盖上湿布,饧30分钟。

2.辣椒面、花椒粉、蒜末、葱花放在一个耐热碗里,加点盐和生抽,拌匀。

3.面团分成两份,擀成手指厚的面片,再切成1公分宽的条。擀面时撒一点点干面粉,切面条。

4.大锅中加足量水烧开,水开后把面条下锅,用筷子轻轻划散。煮至面条浮起来,捞出过凉水。

5.煮好、沥干水的面条放碗里,倒入调好的辣椒碗里。锅中热油至冒烟,马上浇在调料上,听那滋啦声,香气瞬间炸开!

6.趁热快速拌匀,配菜现在加。拌面的动作要潇洒,用筷子从底部翻上来,这样每根面条都均匀裹上油辣子。
