鸭肉好,怎样做好吃?其实最适合夏天吃的是清炖。用鸭肉搭配山药和菌菇来个一锅出,吃着清淡不油腻还滋补。你就在天热的时候这样吃,补水补身体,而更主要的是全家老少都爱吃!

【菌菇山药清炖鸭】

需要准备的食材:大个鸭腿4个,山药2根,干鹿茸菇1把,鲜虫草菇1把,洋葱小半个,姜1大块,料酒3勺,八角1个,植物油适量

详细做法:

第一步,把新鲜的鸭腿剁成块,然后洗去血水。捞入清水锅里,开大火烧开,加料酒去腥。多煮一会挥发腥气,中途把浮沫撇干净。最后捞出鸭块洗净,控水待用

第二步,把洋葱切碎,姜切片。炒锅里加植物油,加入洋葱碎、姜和八角,煸炒至香味浓郁

第三步,倒入鸭块,中火煸炒至鸭肉,淋入料酒翻炒去腥。一直炒到鸭肉表皮微黄

第四步,提前准备好的陶瓷炖锅,里面加够水烧热,把炒好的鸭块倒入锅里,开大火烧开锅,先敞开锅盖大火炖

第五步,把山药去皮洗净,切成段加水浸泡,防止变黑;鹿茸菇提前加温水泡软洗净;虫草菇洗净

第六步,把鹿茸菇下锅,盖上锅盖和鸭块大火炖到汤浓白,再转中小火炖半小时

第七步,最后把山药和虫草菇一起下锅,再炖半小时

第八步,加盐调好口味,关火。此时的鸭肉软烂可口,山药又绵又面,汤汁滋味鲜美,真是味道好极了!
