随着气温的显著增高,雨水也充沛了起来,在6月5号我们将迎来芒种。芒种是二十四节气之一,是夏季里的第二个节气。“芒种不种,再种无用”,这个节气对于农耕来说有着非常重要的意义,在民间被称为“忙种”,预示着农民开始了忙碌的田间生活。
芒种这个节气在民间很受重视,是忙碌与希望的交织,有送花神、安苗、打泥巴仗等风俗,是人们对五谷丰登、一年平安的期盼。习俗总与美食文化相伴,遵循古训,顺应天时,“与时俱进”,再忙别忘“吃3样,做1事”,祛湿解乏,调养身体,平安度过夏天!
酸菜汆白肉
芒种吃酸菜汆白肉是东北的习俗。进入到夏季这个时段,农事活动正忙,一是吃酸菜汆白肉可以补充体力,更有力气干活;二是这道菜酸香解油腻,还开胃,美味可口的饭菜可以解劳作的疲乏。
酸菜汆白肉的做法:
1,需要准备的食材:东北酸菜,带皮五花肉,葱段,姜片,八角,花椒,盐
2,把酸菜切丝,清洗后攥成团待用;五花肉清洗干净
3,煮锅里加水,五花肉切成两段下锅,大火烧开,撇净浮沫。放葱姜、八角、花椒、料酒,煮40分钟,关火
4,另起炒锅,加植物油,放葱姜炒香,倒入酸菜煸炒一会
5,倒入煮肉的原汤,炖20分钟,加盐调味即可关火
6,把酸菜装入小盆里,再捞出五花肉切成片码入。吃的时候调个蒜酱:蒜泥(或蒜末)+生抽+米醋+几滴香油
赤豆薏米水
芒种的这个时段,天热还雨水多,要常吃一些健脾祛湿的食物,比如薏米搭配赤小豆。但是薏米这食材炒熟之后再用会更好一些,减少寒性还祛湿。
赤豆薏米水的做法:
1,需要准备的食材:赤小豆,薏仁米,其中的薏米多放,赤小豆少放
2,炒锅里不要加植物油,放入薏米和赤小豆,干炒到微黄,关火倒出来凉透,用绞馅机稍微搅碎一下,装入罐子里储存
3,每天晚上临睡前舀1-2勺赤豆薏米放入保温杯里,倒入刚烧开的开水,拧紧盖子
4,早起直接喝水,中途还可以反复加水喝。剩下的赤豆薏米已经软烂可口,别浪费,直接吃掉即可。
鸭肉
到了芒种就要防止苦夏了,此时吃鸭很合适。鸭肉属于凉性食物,补虚劳还不燥。尤其是炖汤吃,滋味鲜美不油腻,还养身体,老少爱吃。
