生蚝:250克
红薯淀粉:80克
鸡蛋:2个
小葱段:一把
鱼露: 1勺
食用油
制作步骤:
1.我们先把生蚝肉洗干净,加半勺盐抓一抓,再用清水冲两遍,沥干水分。这一步能去腥,千万别偷懒!
2.红薯淀粉倒进碗里,加150毫升清水,疯狂搅拌到淀粉完全溶解,再把生蚝肉、小葱段一股脑倒进去,撒半勺白胡椒粉,继续拌匀。这时候的糊糊稀稠度很关键,像酸奶一样能缓慢流动就对了,太稠太稀都不行!
3.平底锅烧热,倒一大勺油,油热后,把生蚝淀粉糊倒进去,用铲子摊平,开小火慢慢煎。等底部定型微微金黄,淋上1个打散的鸡蛋液,用铲子轻轻把蛋液往边缘推,让蛋液裹满整个蚝烙。
4.煎到蛋液凝固,用铲子小心翻面,再煎2分钟,两面都变得金黄酥脆,滋滋冒油,这时候撒点鱼露提鲜,出锅装盘!咬一口,外酥里嫩,生蚝鲜得掉眉毛,焦香混着蛋香,绝了!
