菠菜:300克

粉丝:1小把

花生米:3把

大蒜:6瓣

小米辣:2根

白芝麻:1小把

调料:

香醋2勺

生抽1勺

蚝油半勺

白糖小半勺

盐少许

香油1勺

辣椒油1勺

烹饪步骤:

第一步:菠菜根去掉,一片一片叶子掰开,放水里泡5分钟。锅里烧开水,加一小勺盐和几滴食用油,把菠菜放进去,用筷子翻两下,让叶子都受热,大概煮15秒,看到叶子变软、颜色变深就赶紧捞出来。捞出来后马上过凉水,让菠菜凉透,把菠菜挤干水分,切成段,放盆里。

第二步:泡粉丝不用煮!锅里烧点温水,关火,把粉丝放进去,泡10分钟,直到粉丝变软变透明。泡好后捞出来,过一下凉水。然后把粉丝沥干水分,用剪刀剪成10厘米左右的段,放进菠菜的盆里。

第三步:锅里放少许油,冷锅就把花生米放进去,开小火慢慢炸,用铲子不停翻动,让花生受热均匀。炸到花生外皮稍微变色,能闻到香味,有一两颗开始 "噼里啪啦" 响的时候,马上关火。把花生捞出来,放凉,等凉了之后,放进一个小碗里。

第四步:找个小碗,把蒜末、小米辣圈放进去,再撒上1小把白芝麻。锅里烧一勺热油,烧到冒烟,然后把热油泼在蒜末上,接着加2勺香醋、1勺生抽、半勺蚝油、小半勺白糖、少许盐,用筷子搅拌均匀,尝尝味道,根据自己口味调整。拌好的料汁倒进菠菜和粉丝的盆里。

第五步:炸好的花生米放进盆里,淋上1勺香油,然后戴手套,抓拌均匀,让每根粉丝、每片菠菜都裹上料汁,再撒上点白芝麻点缀一下。这时候可以偷偷尝一口,哇!菠菜的清爽、粉丝的爽滑、花生的香脆,加上酸甜微辣的料汁,一口下去超满足,夏天没胃口的时候来上这么一盘,瞬间开胃!
