做法:
1.鸡肉斩块,冷水下锅,加入1片姜,开火焯水。水开后撇去浮沫,捞出鸡块,用温水冲洗干净。
2.当归、黄芪、红枣用清水稍微冲洗一下。红枣去核,不易上火。
3.焯好水的鸡块、所有药材,枸杞除外,和剩下的姜片一同放入炖锅中,加入足量的纯净水,没过所有食材。
4.大火烧开后,转为最小火,盖上盖子慢炖1.5-2小时。出锅前10分钟,加入枸杞和适量的盐,调味。
食材:
干银耳半朵,红枣10颗,桂圆干15克,枸杞1小撮,冰糖。
制作步骤:
1.干银耳用冷水泡发1-2小时,直到完全舒展开。泡发后,剪去根部黄色的硬蒂,然后撕成小朵。红枣、桂圆干和枸杞用清水洗净,备用。
2.撕好的银耳放入锅中,加入足量的水。大火烧开后,转小火慢煮30分钟。
3.锅中放入红枣和桂圆干,继续用小火煮20-30分钟,让红枣和桂圆的味道充分融入汤中。
4.加入冰糖和枸杞,搅拌至冰糖完全融化,再煮5分钟,即可关火。不要马上喝,盖着盖子焖10分钟。
