山西老陈醋的优秀还有一个令其他地区无法仿制的因素,这便是山西高原冬天的寒冷及夏天阳光的猛烈。在太原,它的地表水是管涔山流下来的汾河水,而地下水源自天龙山水系。在早期没有工业污染的时期,汾河水无疑是不可多得的优良水体。

What makes Shanxi mature vinegar truly inimitable is a natural condition others cannot replicate: the region's harsh winters and intense summer sunlight on the Shanxi Plateau. In Taiyuan, the surface water comes from the Fen River, which originates in the Guancen Mountains. Underground water comes from the Tianlong Mountain system. Before the era of industrial pollution, the Fen River was a rare and pristine water source.
