今日的方子需要枯荷。不是鲜荷，须是立冬后采自残塘的，叶脉已枯成深褐色、边缘蜷曲如梵文的荷叶。老师傅转身从青瓷罐中取出三片，指尖一捻，荷叶便碎成大小均匀的片，每一片都保留着完整的扇形脉络。戥子这时才真正派上用场——铜锤在秤杆上移动三个刻度，杆尾精准地抬起：三钱，不多不少。
