所以,隔夜饮料究竟能不能喝?开盖后的饮料,饮用最佳时间是多久呢?
答案是:不止隔夜饮料,开封后超过12小时的饮料,都不建议继续饮用!
Is it safe to drink beverages left out overnight? And how long do opened drinks actually last? The rule of thumb is that once a beverage has been opened, it's best to consume it within 12 hours, overnight or not.
饮料的瓶盖一旦被拧开,就意味着这些口感各异的液体所处的无菌环境被破坏了。特别是室温存放,更容易导致细菌繁殖。
中国农业大学食品科学与营养工程学院副教授吴晓蒙建议:开瓶后没有喝完的饮料,最好是密封冷藏保存,而且要尽快喝完!一般情况下,饮用时间不得超过12小时!
此外,相比倒出来喝饮料,对嘴喝饮料的微生物污染概率更高!不同饮用方式给饮料带来的微生物污染风险也不同。
试验测试发现,直接对嘴喝的饮料,51%的样本被检出瓶中剩余饮料里有微生物生长,主要是口腔微生物群(比如链球菌和葡萄球菌);而倒出来喝的饮料,只有18%的样本被检出剩余饮料中有微生物生长,主要是环境微生物(比如霉菌)。
此外,试验还发现用嘴接触瓶口的方式造成的饮料被污染程度也有差别。相比于用嘴含住整个瓶口,只用嘴接触一半瓶口的喝法,污染到瓶里的细菌相对较少。
The experiment also showed that the way a person drinks from a bottle can influence contamination levels. Drinking with only the lips touching half of the bottle opening introduced fewer bacteria into the liquid compared to drinking with the mouth wrapped fully around the rim.
这时候,有好奇网友发问:那我不对嘴喝,倒一半在杯子里,剩一半放冰箱下次喝呢?
吴晓蒙副教授分析说,饮料在包装未开封前属于密封状态,开盖和饮用后很容易接触到嘴里或者空气中的细菌、真菌等微生物。在后续存放过程中,只要有合适的外界条件(温度和湿度)和适当的养分,这些微生物就会迅速繁殖!
Expert explained that beverages are sealed and remain sterile until opened. Once the package is opened and consumed, the drink is easily exposed to bacteria, fungi, and other microorganisms from the mouth or surrounding air. If conditions such as temperature, humidity, and nutrient levels are favorable, these microbes can multiply rapidly during storage.
虽然预包装饮品开盖后,在室温下放置2个小时后再饮用,不会引起太大的问题,但并不建议大家这样做,如果大量饮用,可能会带来危害。一些鲜榨果汁、现做奶茶类饮料以及蛋白质含量较高的饮料,建议要一次性喝完。
节俭是美德,但开封后的饮料真的不适合留着慢慢喝。
如果一定要喝,记住以下3点:
① 尽量将饮料倒入干净的杯子中饮用,尤其大瓶饮料,不要对瓶吹。
Try to pour the beverage into a clean cup for drinking, especially with large bottles—avoid drinking directly from them.
② 对嘴喝过的饮料,最好在1~2小时内喝完,尤其是现做的奶茶,更要1小时以内,原料越复杂越要尽快喝完。
For beverages that have been sipped directly from the container, it is best to finish them within 1–2 hours, especially freshly made milk tea, which should be consumed within an hour. The more complex the ingredients, the quicker it should be finished.
③ 实在没法儿立即喝完的饮料,密封冷藏好,但冷藏时间最好不要超过12小时(毕竟冷藏只能减缓微生物生长,不能完全阻止)。
If you really can't finish it immediately, seal it tightly and refrigerate it, but you'd better not keep it refrigerated for more than 12 hours (since refrigeration only slows microbial growth and does not completely prevent it).
