在北京人的早点里边，小笼包是占有一席之地的，小小软软的包子差不多能做到一口一个，汤汁丰盈的肉馅儿跟面能很好地融合在一起，透过包子皮就能若隐若现的看到汤汁……特别好吃，周末放假全家人都在一起吃早餐的时候，爸爸有时候会出去买早点，儿子总是会点一笼小笼包，随着北京的天气越来越冷，爸爸也不愿意早上出门了，儿子说想吃小笼包，那就到了妈妈大显身手的时候了，既然谁都不愿意出去买，那就自己动手做吧，拿出我30年霍霍面粉的经验，真就轻松复刻了外面早点摊儿的小笼包，外形相似度达到95%，味道还原度也能达到95%，老公跟儿子都说相当相当好吃，我自己觉得能做成这样已经很难得了，所以今天特地把配方和做法拿出来跟大家分享，如果你也一样喜欢吃小笼包，那不妨自己试试看，万一成功了，今后就不用冒着寒冷的天气出去买包子了。

用料

面团：中筋面粉

200克

酵母粉

2克

白糖

3克

温水

150克

馅料：肉馅儿

250克

大葱碎

适量

十三香

适量

姜粉

适量

生抽

2勺

蚝油

1勺

老抽

1勺

步骤 1

先来制作馅料，锅开大火，倒入适量食用油，烧热后倒入三分之一的肉馅儿炒散，加入一半大葱碎炒匀关火，趁热加入生抽，老抽，蚝油，十三香，姜粉，盐等调料炒匀等到锅中肉馅儿温度下降，加入剩余的三分之二的生肉馅儿，搅拌均匀即可，馅料就制作好了，做好的馅料放冰箱冷藏备用

步骤 2

来和面，面粉中加入白糖和酵母粉搅拌均匀，加入温水，边倒边用筷子搅拌，不停搅拌至没有干粉，面团很软很粘，用手蘸水把面团拍实，放在温暖的地方发酵至两倍大发酵好的面团中间充满气孔，用筷子充分搅拌排气，在表面撒一大把干面粉，就能用了

从冰箱里取出馅料，加入剩余的一半大葱碎搅拌均匀，冷藏后的馅料很硬实，好包

用手揪一小块面蘸一圈表面的干面粉就很好操作了，压扁，包入适量肉馅儿，捏紧收口，全部包好，摆入蒸屉

锅中加入适量清水，把蒸屉摆入锅中，就是之前炒馅儿用的的快涮锅，自带的蒸屉
