咱家里平时炒牛肉、涮牛肉、做滑牛肉，最愁的就是牛肉腌不好。
要么炒出来，又老又柴，嚼都嚼不动，要么吃着发柴发腥，一点都不鲜嫩。
身边好多人腌牛肉，要么只加蛋清，要么光抓淀粉，忙活半天，做出来的牛肉，还是不好吃。
其实这两种方法都不全对，单放一样，根本腌不出嫩牛肉。
今天就教你，我家用了十几年的腌牛肉诀窍，做法超简单，腌出来的牛肉，滑嫩入味，嫩得跟豆腐似的，怎么做都不柴。
我先说说为啥，只放蛋清或淀粉不行。只加蛋清的话，虽然能锁住一点水分，但蛋清粘性太大，腌出来的牛肉，容易发黏，炒的时候，还容易坨在一起，吃着口感不清爽；
光放淀粉更不行，淀粉只能裹在牛肉表面，锁不住牛肉内部的水分，大火一炒，水分立马流失，牛肉直接变柴，还会有一股生粉味，掩盖了牛肉本身的香味。
真正腌牛肉的关键，不是乱加调料，而是先锁水、再入味、最后封油，三步做对，随便怎么煮都鲜嫩。
腌牛肉第一步，也是最关键的一步，就是给牛肉洗去血水、抓出水份。
新鲜牛肉，先切成薄片，切的时候，一定要逆着纹理切，把牛肉的纤维切断，这是不柴的基础。
切好的牛肉，放进碗里，加一小勺食盐，再倒入清水，用手轻轻抓洗一分钟，把牛肉里的血水和杂质洗出来，然后沥干水分。
再用厨房纸巾，把牛肉表面的水分吸干，记住，牛肉表面，没有多余水分，才能吸饱调料，锁水效果才好。
开始调汁腌制，这一步，千万别乱加蛋清淀粉。沥干水的牛肉里，先加少许生抽、一点点料酒去腥，再放一小勺白糖提鲜，抓拌均匀，让牛肉先入个底味。
重点来了，想要牛肉嫩，要加一勺清水+少许小苏打，小苏打一定要少放，一点点就够，多了会发苦，然后用手，朝着一个方向不停抓拌。
抓的时候，能明显感觉到，牛肉在吸收水分，一直抓到牛肉，变得粘稠、水分完全被吃进去，这时候牛肉，已经变得水润润的。
这时候，再放蛋清和淀粉，就对了！抓匀入味的牛肉，加半个蛋清，继续抓拌均匀，最后放一小勺玉米淀粉，轻轻抓裹，让每片牛肉，都裹上一层薄薄的粉浆。
这时候千万不要，多放淀粉，薄薄一层就够，不然口感发面。
最后一步，加一勺食用油抓匀，食用油，能在牛肉表面，形成一层保护膜，炒的时候，防止水分流失，还能让牛肉不粘连。
就这样腌好的牛肉，不管是爆炒、涮火锅，还是做水煮牛肉，下锅后，滑炒几下就熟，
