作为土生土长的扬州人，扬州炒饭是我刻在骨子里的偏爱，它没有复杂的配料，却能凭借简单的食材，碰撞出最惊艳的味道。看似普通的炒饭，实则讲究食材的比例与火候的把控：玉米、青豆焯水至断生，火腿肠切成均匀小丁，炒一份金黄松软的碎鸡蛋，再加入隔夜米饭，撒上适量食盐，大火快速翻炒，让每一粒米饭都裹上蛋液与调料的香气。无需过多配料，食材本身的鲜香便足以打动人心，颗粒分明、香而不腻，一口下去，便是最朴素、最地道的扬州家常味。
