烧烩三鲜

食材：水发海参3个、水发鱿鱼1块、鹌鹑蛋10个、鸡蛋2个、姜1块、葱1段

做法：

1、鸡蛋摊饼切块备用。

2、海参鱿鱼都切段焯水后沥干备用，鸽子蛋煮熟剥好洗净备用，葱切段，姜切丝。

3、锅里放油，炒香葱段姜丝。

4、放入海参鱿鱼鹌鹑蛋爆炒一下均匀受热。

5、放入白糖一茶匙，生抽一汤匙，番茄酱半汤匙，盐一茶匙，翻炒均匀。

6、兑半碗高汤，大火烧开，小火焖烧三到五分钟。

7、大火收汁，半茶匙淀粉兑一汤匙水，勾芡即可。

辣炒蛏子

食材:cheng子500g、葱姜蒜、小米辣、

制作:1、cheng子冷水下锅煮开后捞出过凉水洗净,葱姜蒜切末,小米辣切小段

2、油热后下葱姜蒜爆香，加入cheng子，1勺料酒，1勺生抽，半勺老抽，1小勺盐，1小勺白糖，少许黑胡椒，最后加小米辣大火收汁出锅

香酥蕨菜

做法：1、准备好新鲜的蕨菜洗净，放入沸水中，汆烫至熟，捞出过凉；

2、裹炸粉150克加适量的水、盐、五香粉拌均成面浆，放入蕨菜裹上面浆；

3、把裹上面浆的蕨菜，放入干的50克裹炸粉中，均匀裹上干粉；

4、热锅，倒入适量的油，油温160度时，放入蕨菜炸；

5、微黄翻转另外一面继续炸至全部金灿灿的即可。

做法

1.将破好的鲶鱼（买的时候卖家负责收拾）洗净，尽量洗去鱼体表的粘液，切块滤去水份；蒜苗切成1厘米左右的小段，红辣椒切片，小米椒切小段，生姜切片待用。

2.锅中加入植物油，油热后放入鲶鱼煎几分钟。

3.待一面煎至金黄后翻一面，翻面时小心别弄破鱼皮。

4.煎至两面金黄后，放入姜片，小米椒，部份蒜苗段。

5.加入料酒，生抽，盐，糖等调味品，加入水，没过一半的鱼即可，注意，水要一次性加足，煮鱼时最好不要中途加水。

6.加锅盖中小火煮二十分钟左右，让鱼肉煮入味。

7.揭去锅盖，加入剩下的蒜苗和红辣椒，稍煮片刻，保持色泽。

清炒山药

用料山药2根；胡萝卜半根；盐，香葱，葱，蒜少许

做法山药去皮洗净切片，自己家吃，本着不浪费的选择，圆片就行了。胡萝卜，蒜洗净切片，葱切葱花

热锅凉油，先入葱蒜出香味，然后加入胡萝卜，胡萝卜要油大些才好吃，所以提前放胡萝卜。

胡萝卜略微翻炒后，加入山药翻炒。

山药边缘略微变色后加入高汤，没有高汤加入水也可以。由于山药本身很黏，所以水要稍微多些，需要没过食材。然后加入适量盐调味，一点点糖。这时候就不要翻炒了，容易将山药弄碎，略微摇晃锅即可。待山药成熟，这里看个人口味，喜欢脆的时间可以短些，喜欢面的时间长一点。山药吸水并且汤汁略微收干加入味精出锅即可。装盘后撒上香葱装饰。

香辣炒花蛤

酱汁杏鲍菇

材料：杏鲍菇2个、生抽1勺、老抽1勺、蚝油1勺、糖半勺、葱2根、水淀粉少许

做法：

1、杏鲍菇洗净切片，用小刀斜切十字花型，调料汁：一勺老抽➕一勺生抽➕一勺蚝油➕半勺糖

2、热锅入油，下锅煎至两面金黄，捞出备用

3、热锅入油下去葱末爆香加入杏鲍菇，倒入料汁，煮五分钟左右倒入一点水淀粉勾芡即可出锅。

海笋玉米蘑菇汤

用料：玉米1根，海笋10克，姜2片，胡椒粉1小勺，海鲜菇，白玉菇，口蘑，盐适量

做法：

1、准备食材。

2、玉米切段，口蘑切成薄片备用。

3、将各种菌菇放入沸水中略焯后捞出备用。

4、将切段的玉米放在砂锅中，大火煮开。

5、加入海笋和姜片，再次煮开。

6、转小火，加入焯好的菌菇。

7、炖约二十分钟左右，加入盐调味。

8、再略炖一会，加入少许胡椒粉即可食用。

爆炒猪心

做法1.首先把猪心洗干净，去除筋膜，切成薄片。

2.青红辣椒切块备用。

3.姜蒜切碎备用。

4.准备小半碗水，加入一勺淀粉，适量生抽搅拌均匀。

5.锅中烧开水，放入适量的料酒，水煮开后放入猪心焯水半分钟，猪心变白后迅速捞出沥干水分备用。（这一步是为了去除血腥味）

6.锅中放入适量油烧热，然后放入蒜姜爆香。

7.蒜姜爆香后倒入焯过水的猪心片大火翻炒片刻。

8.猪心翻炒片刻后加入青红椒下锅翻炒，此时加入适量的生抽，蚝油，盐，迅速翻炒至入味。撒入适量胡椒粉拌匀。

9.辣椒快熟时，放入水淀粉勾芡收汁即可。

小米蒸排骨

做法：1、小米泡水三个小时；

2、排骨泡水三十分钟，去掉血水；

3、加入白糖3克，盐5克，生抽20克，料酒10克，蚝油10克，辣椒酱15克；

4、腌2个小时入味；

6、土豆切片放入容器底部；

7、再倒入小米排骨，上笼蒸40分钟左右即可。

铁板脆椒牛肉

2、二汤、白糖、生粉5克、味精调匀成芡汁；锅内留10克色拉油，烧至七成热时放入蒜片、葱段、姜片、辣妹子酱、蚝油煸香，入牛肉、芡汁大火翻匀，入脆香椒、芝麻、炸花生大火炒匀，淋香油出锅，装在大火烧了10分钟的铁板上，撒葱花即可。

芥兰炒腊肠

凉拌牛肉

做法：1、牛腱子泡清血水后洗净；

2、准备调料包，生姜片和小葱；

3、先把牛腱子冷水下锅焯水后捞起洗净；

4、热锅倒油，温油加入葱姜爆香，再把牛肉下入翻炒出香味后加入黄酒、加入红烧酱油炒出酱油香味后加入开水；

5、全部倒入高压锅内，压25分钟；

6、准备好料汁的调料（油辣椒、香油、红酒、醋、鲜酱油、香菜、熟花生碎、蒜末）

清蒸鳕鱼

食材冷冻鳕鱼块300g\蒸鱼豉油15ml

姜丝5g\大葱葱白1根\香葱适量

绿菜椒2g\红菜椒2g\黄菜椒2g

做法1. 鳕鱼块在室温下解冻后用刀刮去鳞片，洗干净沥干，加入料酒、白胡椒粉、盐。

4. 取一圆盘，将大葱段铺底。

5. 将腌好的鳕鱼块放在大葱葱段上，鳕鱼块上放入葱丝和香葱葱白段儿。

6. 大火烧开蒸锅里的水，将鱼块放入锅中，蒸10分钟后关火，不要揭锅盖，焖3分钟。

7. 取出蒸好的鳕鱼块，将所有的葱姜连同蒸鱼的汤汁弃掉不要，淋上蒸鱼豉油。

8. 铺上红黄绿菜椒丝，放上香葱叶丝儿。

9. 炒勺中放适量橄榄油，小火加热油至冒微烟，迅速泼在葱丝和菜椒丝上即可。

酸白菜辣煮角鱼
