煮虾时，到底用“开水”还是冷水区别很大做错了虾又老又柴腥味重|冷水|大虾|姜丝|美味菜肴|花椒|虾肉

大虾是我最推荐中老年和小孩常吃的食物，最好每周至少吃2次，因为虾肉是一种低脂高蛋白的肉，经常吃大虾，可以使我们的免疫力更强！而大虾最有营养的吃法就是煮，因为煮可以最大限度的保留大虾中的营养物质。虽然煮虾能保留大虾的营养物质，但是一些人觉得自己煮的虾又老又柴又腥，有时候花几十元煮的大虾，家人只是尝了一口就不爱吃，自己也尝了一下，味道确实不好，所以经常有粉丝问我，虾到底如何煮的又嫩又香。

其实虾好不好吃，最关键的问题在于煮虾用的水！比如煮虾到底“热水”还是“冷水”？其实区别是很大的，很多人煮的虾不好吃，就是没有用对水导致的。据我了解，很多人煮虾都是将冷水倒入锅中，然后将虾直接放入锅中煮，其实用冷水煮的虾，会使虾煮很长时间才能熟，这样煮出来的虾，不仅不嫩，而且肉还很柴。还有一些人会用热水煮虾，其实用热水煮虾也不是不对，虾进入到热水中后，虾肉立即缩紧，这样煮出来的虾，腥味很重，也不好吃。而煮虾的正确做法是用温水煮虾，温水煮出来的虾肉香又嫩，而且还没一点腥味，超级好吃，接下来我就把水煮虾的详细做法分享给大家，按照我的方法煮，保证您家人爱吃。

【食材准备】：大虾1斤、啤酒50ml、姜丝10克、花椒3克、陈醋、蒸鱼豉油、香菜适量。

【制作方法】：

第一步：要想水煮虾好吃，虾一定要买活的，而且各头不要买太大或太小的，大小适中的大虾，口感更好，而且还容易去除里面的腥味，买回家的大虾，直接冲洗干净即可备用。

第二步：锅中放入适量冷水，然后把姜丝、花椒全部放入锅中，等锅底有少许泡泡出现时，再把准备的啤酒倒入锅中，继续煮半分钟。

第三步：将清洗干净的大虾放入锅中，大火将水煮沸后，继续煮一会儿，看到虾尾开始弯曲，呈现弯月亮形状，就代表大虾已经煮好了，此时立即关火，把所有的虾全部都捞出来。

第四步：准备一个盆，在盆中放入适量凉白开，然后将捞出的虾立即放入凉白开中浸泡5分钟左右，等虾完全冷却后即可捞出。

第五步：准备一个虾盘，将沥干水的大虾整齐的摆在盘中后，淋上少许陈醋、蒸鱼豉油，接着撒上一把香葱即可食用。

【老胡有话说】：

1、煮大虾时，一定要温水煮，因为温水下锅时，虾肉还没有完全紧缩，此时水中的花椒和姜丝的香味可以进入到大虾中，从而更好的去除大虾中的腥味。而且用温水煮的虾，时间不短不长，能使大虾，一直保持最鲜嫩的口感。

2、虾弯曲后，说明虾已经完全熟透了，此时需要立即过凉水，使虾肉快速凉下来，这样能使虾肉吃着特别Q弹。
