2. 腌制有分寸:盘子底铺上姜片,鳕鱼抹上薄薄一层盐,腌10分钟足矣。切记不要久腌,否则鱼肉脱水,鲜味全无,口感像嚼柴火棍。

3. 火候是灵魂:水开上锅,大火猛蒸10分钟,关火后千万别急着揭盖,再焖2分钟。出锅后倒掉盘底的腥水,淋上蒸鱼豉油,铺上葱丝,浇一勺滚烫的热油——“滋啦”一声,那个鲜味儿,真是神仙都坐不住!
