煮挂面别直接开水下锅！面馆老板教3招，根根劲道不坨，香过外卖|中国面条|挂面|汤底|汤面|煎蛋|青菜

作为北方的朋友，对挂面的感情应该是刻在骨子里的。清晨的一碗热汤面，深夜的一碗葱油面，简简单单一捧挂面，就能熨帖肠胃、治愈疲惫。但很多人煮挂面总翻车：要么夹生芯，要么软烂坨成一团，汤浑糊糊没食欲。其实煮挂面根本不用靠天赋，面馆老板的3个小技巧，新手也能煮出根根劲道、爽滑不坨的挂面，成本不到5块，香得连汤都想喝光！

食材准备（一人份，超家常）

- 主料：挂面100g（细面、宽面均可，按喜好选）

- 基础调味：葱花1小把、香菜1根、盐半勺、生抽1勺、香醋半勺、香油几滴

- 增香可选：虾皮1小撮、紫菜少许、煎蛋1个、青菜2颗、辣椒油1勺

面馆老板的3个煮面关键技巧

技巧1：开水下锅是误区，温水下面才劲道

煮挂面最忌直接烧沸开水就下面！沸水会让挂面表面的淀粉瞬间糊化，外层软烂黏手，内部却还夹生，煮好后特别容易坨。

正确做法：锅中加足量水，烧至锅底冒小泡、水温约80℃ 时，下入挂面，用筷子轻轻搅散，防止粘连。

技巧2：点水两次，口感更筋道

挂面入锅后，大火将水再次煮沸，此时加入半碗凉水，让锅中水温快速下降；待水再次沸腾，再加入半碗凉水，第三次煮沸后，挂面基本就煮透了。

两次点水的作用，能让挂面的淀粉结构更紧实，煮出来的面条弹牙不软烂，哪怕放5分钟也不会坨。判断熟度的小窍门：用筷子夹起一根挂面，轻轻一掰，中间无白芯就刚刚好。

技巧3：过凉水，根根分明不粘连

不管是做汤面还是拌面，煮好的挂面都要过一遍凉水（凉白开最佳，干净卫生）。凉水能让面条的温度迅速降低，表面形成一层保护膜，不仅根根分明不粘连，口感还会更爽滑劲道。

如果做拌面，过完凉水后可以滴几滴香油拌匀，防坨效果翻倍；做汤面则过完凉水后，迅速放入热汤中，避免面条变凉。

超百搭的家常挂面做法（3款，零失败）

做法1：暖心虾皮紫菜汤面（鲜掉眉毛，5分钟搞定）

1. 碗中调汤底：放入虾皮、紫菜、葱花、盐、生抽、香醋、香油，冲入半碗滚烫的开水，搅拌均匀。

2. 按上述3个技巧煮好挂面，过凉水后捞入汤碗中。

3. 撒上香菜，可加一个煎蛋或几片青菜，一碗鲜美的汤面就完成了，鲜味儿全在汤里，喝一口暖到胃里。

做法2：香到舔盘的葱油拌面（懒人最爱，零难度）

1. 煮好的挂面过凉水，沥干水分放入碗中，加少许盐和生抽拌匀打底。

2. 热锅放少许食用油，下入葱花（葱白葱绿分开，先下葱白），小火炸出葱油香，至葱白微焦时，连油带葱浇在面条上。

3. 撒上葱绿，喜欢吃辣的加一勺辣椒油，拌匀后每根面条都裹满葱油香，简单又上头。

做法3：开胃酸汤挂面（解腻过瘾，适合没胃口）

1. 碗中调酸汤底：盐半勺、生抽1勺、香醋1勺、辣椒油1勺、葱花、蒜末，冲入热开水搅匀。

2. 煮好的挂面捞入酸汤中，加入焯熟的青菜，拌匀即可。酸香微辣，一口下去胃口大开，连吃两碗都不够。
