总算凑齐了！7道美味家常炖菜，天越冷越受欢迎，果断收藏起来|牛肉|砂锅|美味菜肴|葱花|调味|酸菜|鸡爪

北方的天气说变就变，秋裤已经渐渐抵挡不了严寒的侵袭了，不过好消息是，再过几天北方就要开始供暖了，不知道南方的朋友有没有羡慕呢。

天冷时候做饭也是一个问题，又要好吃还要保暖，分享7道美味家常炖菜，天越冷越受欢迎，赶紧收藏起来吧。

01山药胡萝卜羊肉煲

1、新鲜羊肉先在清水中浸泡10分钟去除血水后，切成2厘米左右的大块备用；山药清洗干净后去皮，可戴上一次性手套防止过敏发痒，切成小段后马上凉水浸泡；胡萝卜、白萝卜洗净去皮切滚刀块；

3、羊肉、白萝卜冷水一起下锅，加入一勺料酒，水烧开之后撇去浮沫捞出冲洗干净；

3、砂锅中放入羊肉、葱段、姜片、陈皮，一次性加入足量开水，大火煮开之后转小火炖煮20分钟；

4、白萝卜、胡萝卜、山药一起下锅，盖上锅盖继续炖煮20分钟。出锅前加适量食盐调味，最后撒上一点葱花或是香菜提香。

02酸菜炖排骨

1、新鲜单根排骨剁成长段，放入清水中浸泡10分钟；

2、将排骨放入砂锅中，加入少量葱段、姜片、八角、桂皮、香叶，加入凉水大火煮开后，撇去浮沫，盖上锅盖小火炖40分钟；

3、炒锅中加入少许食用油，先放葱姜爆香之后，将酸菜下锅煸炒1分钟；

4、炒好的酸菜一起放入砂锅中，加入少量食盐调味，继续小火炖10分钟使酸菜与排骨汤的味道融合，出锅前撒上一点葱花即可。

03鸡爪鲜虾玉米煲

【主要食材】：鸡爪500g，鲜虾200g，年糕200g，玉米1个，土豆1个。

1、鸡爪洗净后剪去指甲，中间斩开，再对半切开。把鸡爪冷水下锅焯水2分钟后捞出；

2、换上一锅清水，加入两三片姜片、2勺料酒，放入焯水过得鸡爪，煮10分钟左右。鸡爪煮好后捞出，煮鸡爪的汤留着备用；

3、鲜虾去掉虾头、虾尾，挑出虾线后下锅效果半勺半分钟，土豆去皮洗净切滚刀块，下锅煎炒至表面微黄后盛出；

4、炒锅中加少量食用油烧热，先将葱段、姜片、蒜瓣、八角、香叶下锅炒出香味后，加入一大勺豆瓣酱小火炒出红油，然后将鸡爪、土豆、玉米下锅，加入2勺甜面酱、1勺蚝油、4勺生抽、1勺老抽，翻炒均匀；

5、将煮鸡爪的水倒入锅内，再加入几粒冰糖提鲜，大火煮开盖上锅盖转中火煮10分钟左右，汤汁收至水量的一半时将虾和年糕下锅，继续煮5分钟，最后撒上葱花、白芝麻即可出锅。

04番茄金针菇蔬菜汤

【主要食材】：西红柿1个，鸡蛋1个，金针菇100克，平菇100克，木耳20克，小葱两根

1、黑木耳提前用温水泡发后切成小块；金针菇去掉根部，中间切开洗净后备用；平菇洗干净后，撕成小块，焯水后备用；西红柿顶部划十字刀口，放开水中烫10秒后去皮，切成小丁备用；

2、砂锅中加入少量食用油烧热，放葱段、蒜片爆香后，将之前切好的西红柿放入锅中，小火煸炒至西红柿出汁后，加适量的盐和生抽；

3、锅中加入适量清水，待水开后，先放入金针菇，煮5分钟。金针菇不太好嚼也不容易消化，建议多煮一会儿，然后再放入木耳和平菇继续煮5分钟，加适量食盐调味；

4、最后关火后，加入一个打散的鸡蛋液，待蛋液凝固后再搅动，撒上葱花出锅。

05胡萝卜炖牛肉

1、炖牛肉最好选择肥瘦相间，有少量筋膜的牛腩、牛肩肉等，牛肉切成2厘米左右见方的大块，清水浸泡3分钟去除部分血水；

2、牛肉冷水下锅有利于牛肉中血水的进一步排出，加入一勺料酒、葱段、姜片去腥提鲜，水开后撇去表面浮沫，热水冲洗干净捞出备用；

3、炒锅中加入少许食用油，先加入葱段、姜片炒香之后，将牛肉下锅稍微煸炒一下，再加入两勺生抽，一勺老抽，炒匀上色之后一次性加入足量开水，加入3粒冰糖，八角、桂皮、香叶也一同下锅；

4、煮开之后，将牛肉连同汤汁一起转入高压锅中，胡萝卜一起下锅小火炖煮20分钟，最后出锅前加适量食盐调味。

06猪肉白菜炖粉条
