两个鸡蛋一把面粉，做出松软香滑的鸡蛋饼，这个食谱冬天特受欢迎|低筋面粉|牛奶|茉莉|面糊|鸡蛋饼

今天到了小寒节气，北京这阵子从去年到元旦，一直都是晴朗的干爽天气，午后充满暖意的阳光照射在阳台上，能达到28度。

这样的好天气，我家放在阳台上的茉莉、绣球花都长得很好，冬季里竟然也能时不常结出几朵茉莉小花，而两盆长寿花也开满了花苞。

天气好，晨跑回来后也能有个好胃口，今天花儿和大家分享的这道美食，就是松软香滑的鸡蛋饼，不同于网购的葱花饼半成品，这种咱们自己做的面糊糊，摊出来的鸡蛋饼，够弹够香，还有淡淡的奶香，真的很好吃。

用平底锅摊这种鸡蛋饼，关键在于搅拌出的面糊，要有个合适的粘稠度，这样才能保证鸡蛋饼的松香口感，这里花儿就和大家分享。

【松香鸡蛋饼】

食材准备：

面粉200克

牛奶360克

鸡蛋2个

盐3克

制作步骤：

1、200克的面粉，一般需要200毫升的牛奶，是一袋半的量，但由于不同面粉的吸水性不同，所以先倒入一袋牛奶，接着倒入第二袋的时候，量要灵活掌握，可以倒入300克后停止，先搅拌。

2、这里没有牛奶，也可以用清水，接着倒入3克盐，搅拌均匀到基本无面粉颗粒。

3、鸡蛋不要一起放入，等倒入牛奶360克后，先打入一个鸡蛋，搅拌均匀。

4、觉得面糊还有些粘稠，就再打入一个鸡蛋，搅拌均匀。

5、准备了3个鸡蛋，这次只用了两个，面糊的状态就可以了。抬起硅胶铲，滴落的面糊可以顺滑垂落，但滴落的面糊不会立刻消失，等个五六秒才能和碗中面糊完全融合，这个状态就可以了。

6、无论怎么搅拌，都会有不少小颗粒，这时候可以过一遍细筛网，得到细腻的面糊。

7、平底锅刷上一层食用油，尽量选锅底比较薄的不粘锅，这样鸡蛋饼熟的快。

8、倒入适量面糊，轻轻晃动平底锅，让面糊均匀遍布锅底。

9、灶台保持中小火，等个十五秒左右，等面糊凝固了再翻面。

基本上翻动3-4次就可以了，也就是不到一分钟左右可以做好一张鸡蛋饼。

10、接下来是个很实用的小窍门。有经验的人都知道，摊完第一张鸡蛋饼，锅底很热，这时候倒入面糊，很容易瞬间凝固，等不到将面糊旋转均匀。所以可以这样将平底锅放在水龙头下，冲洗一下，让锅底快速冷凝。

11、一共做了六张鸡蛋饼，颜色浅黄，香气十足。

做好的鸡蛋饼，卷上土豆丝、培根、香肠，就是一顿美味的早餐喽。
