天冷就馋这锅菜，用料十足鲜香浓郁，一家老小都爱吃，上桌就吃撑|土豆|年糕|甜面酱|美味菜肴|肉蟹|豆瓣酱|鲜虾|鸡爪

作为一个地道的吃货美食作者，不管哪里出现了好吃的，总要第一时间吃到嘴里才算圆满。最近忽然被一道肉蟹煲圈粉了，就是老远就瞅见门口乌泱泱一大堆人，排队要一两个小时才能吃到的肉蟹煲，软烂脱骨的鸡爪是我的大爱。不过最大的缺点就是排队等的时间太久、太久了。于是自力更生、艰苦奋斗的小编决定自己改良在家做，因为螃蟹最近实在是太贵了，所以就先排除，其余材料自己在家做一点不打折，整盘的鸡爪、鲜虾，用料十足吃起来最是过瘾。

鲜虾鸡爪煲

这么一大锅热气腾腾的鲜虾鸡爪煲，味道跟肉蟹煲一模一样，材料上还一点不打折，光是这用料、这色泽，还没吃到嘴里，口水已经都要忍不住了。打从入嘴的第一口起，就顾不上说话了，软烂的鸡爪一嗦就脱骨，年糕和土豆吸足了汤汁，再加上甜脆的玉米，真的是好吃得鲜到骨子里，入口就停不下来，越吃越上瘾。话不多说，真的是太太太太太香了，赶紧开做。

鸡爪500g，鲜虾200g，年糕200g，玉米1个，土豆1个，葱姜蒜少许，料酒3勺，豆瓣酱1勺，甜面酱2勺，蚝油1勺，生抽4勺，老抽1勺，冰糖5粒。（以上所有调料1勺约等于5ml）

1、鸡爪最好选购短粗，肥嘟嘟的那种，吃起来最过瘾。鸡爪洗净后剪去指甲，中间斩开，再对半切开。冷水下锅焯水后捞出，使鸡爪中的血水慢慢渗出。

2、换一锅清水，放入焯好的鸡爪，加入少量姜片和3勺料酒，煮10分钟左右，使鸡爪脱骨，撇去浮沫后将鸡爪捞出备用，煮鸡爪的汤别倒掉，等下还有用处。

3、鲜虾切去虾头、虾脚，用刀开虾背，再用牙签插进虾第二、第三节中间，将虾线挑出，黑黑的虾线是虾的肠道，脏东西都在里面；玉米洗净后先切段再从中间切开；年糕切片；土豆洗净后先去皮，再切滚刀块。

4、炒锅中加少许底油，先将鲜虾下锅小火炒至变红盛出备用。想让虾味更浓的话可以把刚刚切去的虾头洗净下锅炒出虾油。

5、土豆下锅煎炒至表面微黄，然后盛出。
