我家吃饭最怕一件事，夏天胃口一上来就嫌弃油腻。前两天我在厨房里忙活，老大老二一边写作业一边闻着香味往餐桌这边探头。那会儿他们不是喊吃饭，是盯着我盘子里那堆颜色，眼睛像小电灯泡一样亮。青豆绿得发亮，甜玉米黄得像小灯芯，胡萝卜红得不带一点拖泥带水，虾仁还没出锅就甜香往外冒。端上桌那一刻，两个十岁左右的小家伙居然先抢着拍照，再问一句能不能再来一份，我就知道这道金玉满堂的路子对了。
夏天想吃点清爽又有菜有肉，很多人第一反应就是凉拌。可凉拌菜毕竟要么口感偏脆，要么味道偏酸甜，连着吃几顿容易腻。要是你像我这样，早晨给父母准备一口热乎的，晚上还得顾着孩子爱吃什么，热炒就更省心。关键是热炒别走油腻路线，而是走鲜甜路线。金玉满堂就是典型的那种，荤素搭配，虾仁嫩，蔬菜甜，入口清爽，胃里不打架。
我做这道菜的“核心逻辑”很简单，就是用几样味道天然就清甜的鲜蔬，把口感和颜色一起撑起来，再用虾仁和鸡蛋把香气托住。你看青豆、甜玉米、荷兰豆这几样，基本不用太多复杂调味，蒜味也不用硬上，水润鲜甜先站住。胡萝卜和虾仁负责把层次拉出来，不至于只剩下清淡。鸡蛋丝一铺，再加点黄绿红的对比，餐桌气氛就会像夏天窗户开了一条缝，呼啦一下透进来。
食材我按原配方来，省得麻烦也好记。青豆、甜玉米、胡萝卜、荷兰豆、虾仁、鸡蛋、食用油、盐、鸡精、白糖、水淀粉。家里如果虾仁是冷冻的，记得提前化开，别让水分太多影响口感。荷兰豆也别焯太久，翠绿是靠快熟，不是靠慢炖。
