三伏天别再乱吃——少碰茄子土豆——多吃这8样天然补药，安稳过夏天|冬瓜|土豆|小火|木耳|牛肉|绿豆|美味菜肴|胡萝卜|茄子|莴笋|马铃薯

早晨刚上完班回家，我家大儿子就趴在桌边喊热，脸蛋红得跟熟苹果似的。那天中午我拎着电饭锅垫着毛巾冲到厨房，锅还没热，孩子们就开始找水喝。三伏天就是这样，外头一层蒸笼，屋里也不消停，人一热就容易没胃口，吃得乱、喝得少，晚上就得用凉食顶一顶，第二天再反噬肚子。

我跟媳妇商量了下，决定别再把茄子土豆当救命稻草了，吃点清清爽爽、又能顶住消耗的。三伏天最怕的是只图痛快，忽略了身体的需要。三伏天高温持续时，人体出汗多，能量和水分都消耗得更快，饮食得往清淡、补充蛋白和微量营养素的方向走，做饭也得尽量快手，家里老人和孩子都能吃得下。

我们家做的这8道菜，主打一个词省事不将就。蔬菜选得都算“耐热”，做法也不复杂，蒜香、葱香一起来，味道能把人的食欲往回拽。最关键是，吃完不容易上火，也不至于吃得太油太腻，三伏天更稳当。

一、素炒莴笋丝：清口菜里的“下饭筋骨”

莴笋这东西，在老家大人嘴里常说，脆、清、利口。切成细丝一炒，油烟不大，端上桌绿油油，筷子下去根本停不住。

做法是我家常用的：莴笋削去外皮切丝，蒜末和辣椒先下锅煸香，再下莴笋丝大火翻炒到断生，最后盐和鸡粉调味就出锅。

三伏天吃它的好处在于，口感脆爽，能把肉菜的油腻感往下压一点。家里两小孩平时肉吃得也不算少，但配莴笋丝，才会吃得更均衡。

冬瓜是三伏天的老熟人了，清水煮不费劲，炒也能快出锅。冬瓜和虾皮搭在一起，鲜味比单纯清炒要明显，老人孩子都能接受。

我们通常按这样的流程来：冬瓜去皮切薄片，冷锅少油先放虾皮小火煸出香味，再淋生抽和蚝油翻炒，放入冬瓜片，倒一小碗清水，加少许盐，盖锅焖4到5分钟到冬瓜变软透明，最后用水淀粉收汁，撒葱花就行。

这一道我最喜欢的点是，不用放太多油。冬瓜本身含水多，口感清，虾皮带鲜，等于把“想吃但又怕腻”的矛盾给解决了。

三伏天我最不爱的是让家里人一直喝冰的。孩子能忍，老人不一定能忍，肚子更是讲究。绿豆百合汤这类热饮或常温饮就很合适，清清爽爽，关键是做法透明。

做的时候我记得很清楚：绿豆150克，干百合30克。绿豆淘洗干净挑掉杂质，泡两小时让它吸足水；干百合用温水泡发30分钟，撕去根部老蒂后再洗净。

锅里加足量清水，水量约绿豆的8到10倍，大火煮沸后撇去浮沫，转小火慢煮30分钟，绿豆开始裂口再下百合片，继续炖煮20分钟。再加冰糖适量，煮到完全融化后小火再煮5分钟，关火盖锅焖10分钟。最后放凉冷藏两小时再喝，口感更稳。

这里我得说句实话：绿豆和百合不是“玄学补药”，但在高温季节，它们更像是饮食管理里的底盘。绿豆的清爽思路，配百合的润感，家里人能喝下去，胃也不容易抗议。

四、马蹄木耳炒虾仁：脆爽加蛋白，吃完不虚

三伏天最容易出现的问题不是馋，是身体扛不住。虾仁这种优质蛋白，能把“吃得干不干净、顶不顶饱”这事托住。马蹄和木耳又给了口感和一些膳食搭配。

我按这个步骤做：虾仁开背去虾线，料酒和姜丝腌一下去腥；马蹄去皮切片，放淡盐水里泡着，避免氧化发黑；干木耳提前泡发，撕成大小均匀的小朵。

锅里烧水，水开后马蹄和木耳分别焯水一分钟，捞出沥干。热锅倒油，葱蒜末爆香后大火快速翻炒虾仁、马蹄和木耳，盐和蚝油调味，最后淋少许薄淀粉水勾芡，让汤汁裹住食材就出锅。

这道菜的重点是快。大火翻炒，时间短，虾仁更嫩，木耳也不会发软到没嚼头。

五、西葫芦炒牛肉：把“热天缺肉感”补上，不让油腻拖后腿

牛肉是补强的选手，但三伏天你要是做得太油太慢，吃完就容易觉得难受。西葫芦清爽，正好把牛肉的厚重打薄。

我家做法很固定：牛里脊逆纹切片，生抽、淀粉、少许油抓匀，腌15分钟。西葫芦切片，胡萝卜切丝。热锅倒油爆香蒜末，下牛肉大火滑炒到变色立刻盛出。底油再下西葫芦和胡萝卜翻炒到断生，再倒回牛肉，放生抽、蚝油和少许盐炒匀出锅。

逆纹切和滑炒这两个动作看似麻烦，其实很省时间。牛肉更嫩，孩子也更愿意吃。

六、干煸四季豆：给三伏天加点“干香劲”

四季豆要是处理不好容易有味道，但干煸做法能把香气拉满，还能让口感更利落。关键还是火候和油温。

步骤我通常这样：四季豆洗净沥干，剔掉老筋。锅里多放一点油，中火到大火之间慢慢煸，煸到表皮微皱、翠绿变软就盛出。留底油，放花椒、干辣椒、蒜末炒出香味，再倒回四季豆，少许盐和生抽调味，大火翻炒均匀，撒白芝麻出锅。

这一道我们家老人也能吃，但我会把辣椒和花椒的量控制住。三伏天吃得有滋有味，人就不会老想着随便对付。

七、经典青椒炒肉丝：家常里最稳的那一口

青椒炒肉丝不是什么新菜，但在三伏天就是能赢。青椒清爽、肉丝嫩，姜蒜和蚝油把味道拧成一股线，端上桌就有人动筷。

我做时会按上浆思路：里脊切丝，加盐、生抽、老抽、料酒抓匀，裹淀粉，淋一丢丢食用油锁水。热锅先滑炒肉丝到七分熟盛出。锅里再爆香姜蒜末，下青椒丝加盐翻炒，倒回肉丝，放蚝油大火炒匀，入味就收。

八、闷烧羊排：热天也要有一口“软烂踏实”

很多人一到三伏天就不碰羊肉，担心上火。我反过来看：羊排用闷烧的方式，汤汁收紧，肉软烂，调味里有葱姜蒜和香料，吃的时候量别太猛，家里人反而觉得踏实。

做法按这个来：羊排剁成小块，清水里浸泡半小时泡出血水，捞出控干。胡萝卜和土豆去皮洗净切滚刀块。锅里烧水，羊排冷水下锅，放葱段、姜片，加入料酒，大火煮开撇浮沫，捞出温水冲洗。另起锅烧油，油热放冰糖小火炒出糖色，把羊排翻炒上色。放葱姜蒜、八角、香叶、桂皮翻炒出香味，淋料酒、生抽、老抽、蚝油翻炒，再倒入没过羊排的热水，大火烧开后转小火盖盖焖煮40分钟。放胡萝卜和土豆块，加盐继续焖20分钟，土豆软烂后大火收浓汤汁出锅。

我家一般是饭点吃，汤汁拌一点米饭，孩子能把碗底舔干净。老人也喜欢这种软烂的口感，不用咬得太费劲。
