长了个中国胃，平时早餐就爱吃点中式的面食，包子是家里经常做，不同的内馅，香葱肉包，霉干菜肉包，豆沙包等。说到酱肉包子可能很多人没吃过，这款肉馅我吃过一次就念念不忘。和普通的生肉搅拌好直接包的包子不同，酱肉包子的内馅是炒制过的，非常的有味道，汤汁会有一部分浸到面团里，所以包子的皮都非常的好吃呢！
关于内馅的用料，也不是一成不变，我平时爱用的香菇，香干，笋，和猪肉。比例各占一份，现在因为还没有冬笋，所以就没有用，如果有就更好吃了。其实换成其它的原料比如胡萝卜等也是非常好吃的。另外内馅不需要用料理机打的粉碎，可以用刀切成小丁，不需要特别小，这样吃的时候能吃到肉的颗粒感，嚼起来很香。猪肉最好选用肥肉相间的，这样炒过之后口感不至于很柴。
这次用的面粉是金龙鱼澳大利亚麦芯小麦粉，这款面粉我感觉非常不错，做中式面食非常的好用。做出的包子外皮有嚼劲，口感好，而且有小麦的味。喜欢的朋友可以试试这款面粉。它的吸水性比普通面粉稍强一些，揉面时可适当多加一点点水。
面皮原料：
金龙鱼澳大利亚麦芯小麦粉500克、水250克、酵母4克、
内馅原料：
猪肉、香干、香菇、料酒、盐、秘制红烧汁、生姜。
做法：
1、原料备用。
2、干酵母倒入温水中搅拌均匀，然后倒入金龙鱼澳大利亚麦芯小麦粉。
3、用厨师机揉成均匀的面团，收圆后盖上保鲜膜进行发酵。
4、干香菇提前泡发备用。
5、内馅原料全部切成丁。
6、油锅烧热下入姜末和肉丁炒均匀。
7、然后倒入其它的原料同炒，倒入秘制红烧汁，料酒，翻炒均匀，然后倒入适量的水，稍微煮一会。不需要把汁收干，稍微留一些汤汁。（炒好的内馅需要放凉后再使用。）
8、面团发酵到原来的两倍以上大小，取出揉均匀，醒一会。
9、把面团搓成长条后，切成同样大小的剂子。
10、取一个小剂子按扁，然后擀圆。包入适量的内馅，捏上均匀的小褶子即可。
11、做好的包子生坯放在蒸笼内二次醒发十来分钟。
12、冷水上锅蒸15分钟以上，蒸好不要立即开盖，继续焖五分钟。
