小暑这天，我早晨把手机支在灶台边，盯着儿子写作业的那几分钟，眼睛就先开始抗议了。说是干涩也不算，就是那种发酸发闷，像被蒸汽捂住了眼皮。中午我和媳妇商量着做点清淡的家常菜，别油腻，别厚重，得让全家一边吃一边把火气往下按住。小暑湿热重，人的胃口容易乱，情绪也容易跟着烦，饭桌得有点章法。
我爸妈在旁边闻味儿比谁都敏感，喜欢热乎的，但也怕上火。两个小家伙十岁左右，嘴上说不馋，筷子动得比谁都快。于是我按着小暑的口味做了四道平价家常，荤素搭配，清爽为主，眼睛和身体都顾着。
第一盘是番茄鱼片汤。黑鱼肉细嫩、蛋白质含量高，脂肪相对低，蒸炒炖煮都不腻。番茄里有番茄红素，入口酸甜清爽，汤味一上桌，家里人就知道今天不走油路线。关键是这道汤吃起来不费劲，夏天肠胃负担轻，老人孩子都能咽得下去。
做法里我最在意两点：一是鱼片要上浆，二是番茄要炒到出沙。鱼片上浆能把嫩滑锁住，不会下锅就散成一锅碎末。番茄炒出沙，汤的口感才浓，酸甜才稳，不会寡淡。
我先把鱼肉切片洗净沥干，加少许盐、白胡椒粉、蛋清和一勺淀粉抓匀，腌10分钟。锅里少油，先把熟透番茄小火翻炒到出沙，再倒入足量清水加姜片煮开。把鱼片下锅，轻轻推散，煮到鱼片全部浮起变色就行。最后少量盐调味，撒葱花出锅。
我跟家里人说一句他们都记得的话：鱼片别煮太久，像做家务，过了点就不对劲。鱼片变色就收尾，嫩才是真的嫩。

第二盘是胡萝卜炒蛋。很多人觉得护眼得靠贵的东西，其实家常就能做。胡萝卜里有胡萝卜素，蛋提供优质蛋白，配在一起口感香甜，清淡又容易消化。清晨和晚餐都能上桌，老人牙口也不挑，孩子拿着米饭也能多添半碗。
我用的是胡萝卜一根，鸡蛋3个。胡萝卜擦细丝，鸡蛋加少许盐打散。热锅倒油，把蛋液炒熟成块后盛出。底油继续下胡萝卜丝中小火翻炒2分钟至变软，再倒回鸡蛋翻拌均匀，加盐调味，撒葱花出锅就行。
