第二道是冬瓜炖鸡肉。山东人爱吃炖菜，但冬瓜这种食材，很多人怕“炖不进去味”或“炖化了不成块”。我教家里人最省事的办法就一个思路，鸡汤先把鲜味炖出来，冬瓜最后用时间焖到通透。三黄鸡半只约六百克，冬瓜四百五十克。鸡肉要先剁成大小均匀的块，清水里泡十分钟，泡出血水，再捞出来冲洗干净沥干。焯水时用冷水下锅，放两片姜和一勺料酒，大火烧开后把血沫煮出来撇干净，再用温水冲洗浮沫。你要是用冷水猛冲，肉会收紧，后面怎么炖都容易发柴发硬。
砂锅里加足量清水两千毫升左右，放入洗净的鸡块和剩下姜片，大火烧开后转小火慢炖四十分钟，让汤里有“鸡汤底味”。冬瓜处理成三厘米左右厚块，不要切太薄，薄了容易煮化。冬瓜下锅以后再炖十五分钟就够了，冬瓜通透软糯，还能吸到鸡汤鲜味。调味只放盐，别急着加鸡精味精，汤本来就鲜。最后撒点枸杞和葱花就关火，这种清润感，不是靠重口味堆出来的。

腌牛肉料简单：生抽半勺、料酒半勺、淀粉一勺，再淋少许食用油锁住水分，腌十分钟。煮山药先下锅，锅里水烧开后放姜片，倒入沥干的山药片，转中小火煮八分钟，煮到断生软糯。牛肉下锅要保持微沸状态，别大火翻滚，分散下入，别一次性倒进去，避免粘连。牛肉煮一分半钟就熟透，肉片变色浮起，立刻加盐和少许白胡椒粉调味。最后滴几滴香油，撒葱花，关火出锅。这里的“微沸”和“一分半”很关键，久煮就老，鲜嫩感就没了。
第四道是白萝卜鱼腥草青橄榄汤。它在我家属于“老小都能喝”的那种，但前提是顺序不能乱。排骨五百克，白萝卜四百克，青橄榄八颗，新鲜鱼腥草一小把，生姜三片，蜜枣两颗。料酒一勺，清水一千八百毫升。鱼腥草很多人一听名字就皱眉，但你只要按时间放，它的苦味和药味不会压得人难受。
处理上先把麻烦都做完：排骨洗净。青橄榄要用刀背拍裂，完整橄榄煮不出香味。白萝卜去皮切滚刀块。鱼腥草摘掉老根烂叶，反复冲洗泥沙后切段。排骨焯水用冷水下锅，加入姜片和料酒，大火煮沸撇干净血沫，再用温水冲洗。砂锅里放排骨、拍裂的青橄榄、蜜枣和姜片，加足量清水，大火烧开后转小火慢炖六十分钟，炖出底味。白萝卜后放，继续小火炖二十分钟，让萝卜吸汤鲜味，不会煮化变成一锅稀泥。鱼腥草最后放，转小火再煮十五分钟就关火。鱼腥草放早了久煮会发黄发苦，药味更明显，不适合家里老人孩子频繁喝。
调味只加少许盐就行，蜜枣自带微甜，清润回甘的味道出来了就够。你要是口味重，往往会把汤本来的清爽弄没了。怕腥的话，可以排骨多焯一次，把肉腥味处理干净，汤味会更纯。对老人来说，干净的汤比复杂的汤更容易入口；对孩子来说，不靠辣不靠重盐，也更能接受。
说到这里，你可能要问，为什么我一直强调顺序和时间？因为这四道菜其实都在做同一件事，把“好吃”拆开成可执行的动作。藕丝的酥脆靠四十秒焯水和凉白开过凉锁住口感；鸡汤的清亮靠先焯后温水冲，再用小火四十分钟炖出底鲜，冬瓜最后十五分钟让它通透不烂；牛肉山药汤的嫩滑靠逆纹切片、封油腌十分钟、微沸下一分半熟透；青橄榄和鱼腥草汤的回甘靠青橄榄拍裂入味、萝卜后放不煮化、鱼腥草最后十五分钟避免发苦发黄。
这些步骤看着像讲究，但其实就是家庭厨房的经验。山东人过日子讲究实在，少走弯路，饭桌上不搞虚的。再说我家里条件也不允许我天天试错。厨房就是一台小型生产线，老人要清爽，孩子要好入口，我要省事还得保证口感。把时间掐准，就能减少翻车。比如藕丝焯久了就不脆，冬瓜炖太早就容易化，牛肉煮老了就柴，鱼腥草久煮就苦黄，这些都是一锅汤或者一盘凉拌菜的硬逻辑。
