我家今年还没到入伏，厨房里就先热闹起来了。前两天我妈在客厅喊我，说菜市场又便宜又新鲜，让我赶紧多买点。她刚说完，我儿子就把手往口袋里一伸，说要吃茄子干炖肉那味儿。你看，这俩小家伙嘴馋得很，可不是我教的，是老家那个做法代代传下来的。老一辈嘴上说着省心，手上动作可不慢，趁着入伏前太阳足，把蔬菜晒成干，秋冬一炖肉香味就出来了，还能放得住。

这事儿不玄乎，核心就一句话，夏天蔬菜吸饱了阳光和雨水，鲜灵劲儿足，水分也多，放两天就蔫。你要是等到秋冬再去买，价格、口感都不一样。所以上到入伏前，咱山东人讲究个趁热打铁，趁着大太阳好，赶紧把适合晒干的几样菜下手，晒成干菜留着用。今天我就按我做的那套，把6种入伏前特别适合晒的蔬菜说清楚，顺带把晒制关键点也讲明白，省得你买回去白忙活。

第一种，梅豆角，俗话也叫扁豆。

这东西在夏初正当季，卖的时候便宜，几毛钱一斤那会儿你不囤都说不过去。新鲜梅豆角炒着吃好吃，但晒成干以后口感会变，冬天炖排骨，吃起来有股子醇香，嚼着也带劲，连我这种饭量大的山东汉都能多添两口米饭。

我一般挑那种鲜嫩的，没有虫眼，撕掉两边老筋，洗干净。锅里水烧开，放一勺盐，梅豆角下去焯水两分钟左右，看到颜色变深绿、也开始变软就立刻捞出来。捞出来过一遍凉水，挂晾衣绳或者平铺在簸箕里，放大太阳下暴晒两三天。晒到用手一捏就干硬，基本就能收了。

第二种，豆角干，也就是你平常吃的豆角晒成干。

很多人以为晒干就是把水分晒没了，其实味道也会变。豆角新鲜的时候水多、易坏，放两天就开始发软有味。晒成豆角干以后，无论是炖肉还是包子馅，都能吃出层次感。最关键的是炖的时候它能吸肉香，肉炖得越久，它越入味。

https://github.com/church19br/mznjyu/blob/main/185641_52787.md做的时候我用同样的思路先焯后晒。挑鲜嫩豆角，掐掉两头和筋，洗净。锅里水开后放豆角，加一勺盐焯三到五分钟，断生就行，别煮得太软。捞出来沥干水分，挂通风处或平铺簸箕，太阳下暴晒两天左右，晒到完全干透。干透的标志就是表面不回潮，一根拿起来轻飘不黏手。

第三种，茄子干。

茄子夏天水灵，晒干后就像把肉汁和香味一起锁进去了。你拿它去炒肉丝，或者炖骨头，它不会只剩干巴味，反而像海绵一样，吸饱了汤和油，嚼起来就更香。很多人不爱茄子是因为生着吃觉得软和油腻，但干茄子能把这股子尴尬化掉。

茄子洗净去蒂，切成片或条。为了防止氧化发黑，我会先放淡盐水里浸泡十五分钟。之后均匀铺在簸箕上，太阳下暴晒两天，中间每半天翻一次面。翻面不是矫情，是为了晒得匀，少受一边潮气，就不容易返潮生霉。晒到表面发干、边角卷曲，闻着干香就可以收。

第四种，冬瓜干。

冬瓜别只当冬天菜。它夏天大量上市，水分足，晒干以后口感就会变成另外一种东西。很多人听说冬瓜干，第一反应是清淡，结果一炖肉你就明白了。冬瓜干吃起来有嚼头，炖出来会把肉汤吸进去，有时候我都觉得比光啃肉更过瘾，老香。

我一般做的是切厚一点的圈，先去皮洗净，掏空籽以后再洗一遍。切半圆或薄片，放竹制簸箕上晒干。这里我给个山东人的经验，冬瓜片更需要耐心晒，太阳够、风也不闷的情况下，两三天就更稳。你要是天气潮，干得慢，别硬收，宁可多晒半天一小时，回家一闻不返潮才算数。

第五种，豇豆角干。

山东夏天最不能缺的一样就是豇豆角，尤其我们家老人爱吃，炒也行，炖也行。晒豇豆角干以后炖肉会更有口感，肉不那么单薄，吃起来更丰富。豇豆角干的好处就是耐炖，汤里香味能挂住。

做法我一般先把它处理得干净利落。挑新鲜豇豆角，没虫眼的。洗净后沸水入锅，盐用三茶匙，焯煮五分钟左右。看到豇豆角变色、变软就捞出。捞出来过清水冷却一下，再沥干水分。最后挂架子上晒，太阳底下晒干。它不像细嫩叶菜那么娇气，晒到表面干硬、手捏不出水汽，就能收。

第六种，莴笋片。

莴笋在夏季最脆，入伏前这段时间买到的口感更好。晒成莴笋片以后，炖肉能增加鲜味，还能解腻。你想象一下，冬天炖五花肉，油脂一多，胃里容易腻，这时候来一盘莴笋干炖肉，咬下去脆嫩，嘴里就不那么糯了，吃起来更顺。

莴笋去皮洗净，切薄厚均匀的片，厚度大约0.3到0.5厘米。切完以后撒适量食盐搅拌均匀，腌制两个小时以上。腌过再平铺竹簸箕上暴晒两天。腌制这一步很关键，它让莴笋片先把一部分水分和生味处理掉，晒的时候更省火候。晒到明显发干、边缘不软塌，基本就稳了。

别光看晒什么，还得看你怎么收。

我家一般是晒完当晚不急着全封死，放到通风处再晾一会儿，等手摸不潮再装袋或装罐。装的时候我会把不同蔬菜分开，梅豆角、豆角干、茄子干、冬瓜干、豇豆角干、莴笋片各自成一份，免得串味。放置位置也讲究干燥，不是说怕潮那么简单，是怕一回潮就全盘返工。

还有一个容易被忽略的点，晒的时候别只图快。你如果中间翻面做得不够，或者某一堆叠得太密，中心位置晒不透，后续炖的时候味道就不如晒得均匀的。就像咱山东人烧大锅，你火不够旺，锅底不翻匀，肉不紧实，味道也不对。蔬菜干也是这个理。

我还想说点跟健康有关的，省得有人觉得晒干就是为了省钱。

晒干的本质是把水分降下来，减少微生物生长条件，这样就更耐储存。蔬菜原有的香气和纤维结构会在晒制过程中发生变化，口感从新鲜的软变成耐炖的韧。你秋冬炖肉的时候，不是把干菜当成配菜糊弄，而是让干菜吸收汤汁，入口变得有嚼头、有味道。

从吃法上说，泡发用温水泡开再下锅，汤更容易进味。炖肉时干菜吸汤，肉的香也会回到干菜里，最后一锅出来，老人孩子都能吃得下，不用再单独加很多油盐。

说到这儿，我得把咱山东人爱较真的嘴也用上。

你问我这6样里哪种最香，我不好一口咬死。梅豆角冬天炖排骨那股醇香最对我胃口，茄子干炖骨头能把汤味拉得很稳，豆角干做包子馅能吃出肉感，豇豆角干炖肉口感更丰富，冬瓜干能把油腻压下去，莴笋片炖出来脆口解腻。每种都有它的用处。

我家老人平时吃得不多但挑，两个孩子十岁左右，喜欢嚼劲多的东西，炖菜里能找到口感就能吃几碗。你要是把这6样按入伏前的节奏晒上，等到秋冬炖肉时，锅一开就有味，碗一端就见底。最重要的是，你不用临时再去找“同款新鲜”，也不用担心放不住。
