我家老大十岁那年，闹着要吃蒜香鸡爪。那天我从冰箱里翻出鸡爪，自己先把指甲剪了，冷水下锅加姜片和料酒，煮开后中小火12分钟。锅一盖上，屋里就开始冒味儿，孩子还在写作业，眼睛却先瞄向厨房，连声问能不能快点。
我把鸡爪捞出来，立刻丢进冰水里浸10分钟，颜色还是亮的，口感脆嫩的那股劲儿一上来，老二筷子都不怎么用，直接上手抓。你说这事怪不怪，明明外面什么都有，蒜香鸡爪、酸辣鸡杂、糖醋排骨一应俱全，孩子却更愿意等我这口锅的味道。
这口锅的底气在于什么，很多人不爱听大道理，我就说具体的。外卖确实方便，但你要让全家吃得放心，最绕不开的就是卫生和营养这两件事。鸡爪这种带胶质的食材，得煮到软糯Q弹，不然嚼不动就是费事；蛋白质类和内脏类，像鸡杂，温度不对就容易腥；排骨糖醋讲究火候，收汁差一点就发腻。
我给家里做饭时就按这套思路走，把每一步的关键点写清楚，做出来味道稳定，孩子和爸妈都能吃得舒服。今天我就把家里常做的8道鲜香硬菜，按能直接照着做的方式摆出来，山东男人不爱花里胡哨，图的就是一顿饭能管三顿嘴。
先说第一道，蒜蓉鸡爪。
食材很朴素，鸡爪500克，大量蒜末，小米辣、葱花、香菜都备着。调味用生抽3勺、香醋2勺、蚝油1勺，盐、白糖、香油、辣椒油按口味来。
关键步骤有两个。第一，鸡爪剪去指甲，清洗干净，对半切开让味道进去得快。第二，煮好后必须冰水浸10分钟。很多人鸡爪煮了就直接凉，口感就会发软塌，这就是差别。冷水下锅加姜片和料酒，中小火煮12分钟，煮到软糯Q弹别煮太烂。控干水分后拌上蒜蓉料汁，盖保鲜膜冷藏腌制30分钟，腌得时间越足，蒜香和酸辣会更贴口。
端上桌，孩子那句最真实，酸辣的那下很带劲。老人也说不腻，蒜香不冲口。
第二道，番茄炒花菜。
花菜这东西很多人容易炒老，嚼着费劲。你想省事，就从焯水开始。番茄用食盐搓洗干净切块，花菜剪成小朵，清水里加食盐搅匀浸泡10分钟，洗净沥干。
水开后加食盐和少许油，花菜下锅焯水1分钟就捞出来。起锅热油，先下葱段和蒜末炒出香味，再放番茄翻炒到出汁，最后把花菜下锅翻炒均匀。加生抽和蚝油调味，再放葱段翻炒几下就出锅。
我家爸妈喜欢这种清爽的，尤其是天热的时候，米饭多吃两口也不觉得油。
第三道，韭菜炒鸡蛋。
这道菜在我家属于快手牌，十分钟能上桌，锅铲一动小区里都能闻到。韭菜切段，鸡蛋打散备用。热锅凉油，先下韭菜翻炒到熟，再倒入鸡蛋快速翻炒，最后加盐和生抽调味就行。
很多人只把韭菜当配菜，其实它有明显的叶酸营养价值。对家庭主妇来说，最实际的意义是孩子和老人都能吃上这个绿色菜。再直一点说，不挑嘴的前提是熟得够，咬下去脆，香气出来才会愿意多夹两筷子。

丝瓜这东西，削皮和切法要讲究。丝瓜削去硬皮，切成滚刀块；鸡蛋2个加少许盐打散。锅里少量油，下葱花爆香，倒入丝瓜翻炒半分钟，让它先出点水汽变软。加足量清水大火煮开，煮2分钟到丝瓜通透变软。转小火淋入蛋液，静置10秒再轻轻推动形成蛋花，加盐调味，滴几滴香油关火。
这汤的优点就是快，而且不需要复杂调味。家里孩子上学忙，早晚胃口不稳定，这碗汤能把水分和蛋白质一起补上。老人也喜欢，因为口感细，不会刺激。
第五道，毛豆炒胡萝卜。
毛豆焯水是底线，别偷懒。新鲜毛豆洗净，焯水两分钟捞出。胡萝卜切小丁，葱段备好。热油先爆香葱段，再把胡萝卜下锅翻炒片刻，随后倒入毛豆。加半勺清水焖3分钟，加盐调味，大火收干汤汁就可以。
我给孩子做饭时会把这道菜放进米饭套餐里，因为它颜色亮，吃着不费劲。老人牙口一般，这种丁状软熟的更友好，嚼起来省力。
第六道，酸辣鸡杂。
这道菜有个原则，处理干净，滑炒快。鸡杂用鸡胗和鸡心，清水反复搓洗干净，鸡胗改刀切成薄片，鸡心对半切开。腌的时候抓拌10分钟，用1勺料酒、1勺生抽、半勺淀粉就够。
泡椒泡姜改刀切碎，芹菜切段，青红椒切段，再切些姜末和蒜末。锅里油温烧到七成热，把腌好的鸡杂下去，大火滑炒到变色卷曲立刻盛出。
锅留底油，小火煸香姜蒜末和泡椒泡姜的酸辣味，再下芹菜段和青红椒段翻炒断生。最后把鸡杂倒回锅里，沿锅边淋1勺料酒，加1勺生抽、半勺蚝油和少许白糖提鲜，大火快速翻炒均匀出锅。
这道菜做得好，酸香带辣，吃着有劲，做得不好腥味会顶上来。外卖很多时候口味偏重，酸辣是有了，但鸡杂这种需要“快火锁香”的步骤不够精准，口感就可能发柴。
第七道，地三鲜。
茄子、土豆、青椒算地三鲜的三个主角，核心在炸和炒的衔接。茄子土豆切块，青椒切块，蒜切末。调酱汁用生抽、老抽、白糖、淀粉和少许清水搅匀。
土豆先炸到金黄捞出，茄子再炸到软一点捞出。锅里留底油，蒜末炒香，倒入青椒翻炒几下，再把炸好的土豆和茄子下锅，倒入酱汁翻炒均匀，盐按口味补。
我家孩子能接受“外脆里软”的口感，爸妈也爱配米饭。你要想把它做得像饭店那样，炸得时间差一点就不一样，尤其土豆，外面焦一点，里面才糯。
第八道，糖醋排骨。
排骨这道菜不是谁都能做得稳，糖色和收汁最关键。排骨冷水下锅，加姜片和料酒焯水捞出。锅里少许油，放冰糖炒出糖色，再把排骨翻炒上色。加入生抽、老抽、醋和适量清水，大火煮开后转小火焖30到40分钟，直到排骨软烂。最后大火收汁，盐按口味调。
这里的“焖30到40分钟”很实在，不是为了凑字数。时间短了，排骨还硬，吃着费劲；时间久了，汤汁浓稠的甜酸会变成一锅厚腻。家里有老人和孩子，这种需要口感稳定的菜，自己掌控火候最踏实。
这8道菜放在同一顿饭里，基本能覆盖家里四口人的口味。韭菜炒鸡蛋适合当下饭主菜，丝瓜鸡蛋汤负责清口，毛豆胡萝卜让孩子多吃一点绿色和豆类，蒜蓉鸡爪和酸辣鸡杂负责把饭桌的气氛顶起来。再来个地三鲜或糖醋排骨，一桌就齐活，谁都不空着嘴等。
我也知道，很多人不想做饭是因为担心麻烦。其实细节一旦写清楚，做起来就不难。比如鸡爪那10分钟冰水锁口感，比如花菜焯水1分钟，比如鸡杂七成热油滑炒到变色卷曲立刻盛出，这些都是能看得见效果的动作。
说到卫生和营养，咱不靠空话。自家做饭最直接的好处是你知道食材从哪来、怎么处理、怎么熟透。鸡爪指甲剪干净，清洗干净；鸡杂反复搓洗；焯水去掉部分生腥和杂质；煮制和焖煮保证熟透。营养这块也更容易做到均衡，蛋白质有鸡蛋、鸡肉和排骨，蔬菜有花菜、韭菜、丝瓜、毛豆胡萝卜、青椒，酸辣和蒜香用来提味，口味稳定，盐和油用量也更容易控制。
外卖不是不能吃，但你要让家里老人和孩子都吃得舒坦，自己掌控步骤比什么都强。
