黑木耳还有个老百姓熟悉的特点，就是耐放、便宜、好买。干货一小把泡发后能涨不少，算下来很实惠。家里人口多的时候，像我这种山东汉子，饭量本来就不小，一盘菜太精贵还不够分，木耳这种食材就刚合适，花不了多少，菜量却能撑起来。尤其配黄瓜、山药、芹菜这些常见菜，家里灶台一开火，几分钟就能整出三四样。
从食材搭配上看，黑木耳和这几样都不冲突。黄瓜清，山药温，芹菜香，豆腐软，菌菇鲜，木耳负责提供口感和结构。一个家常食材，能在不同菜里承担不同角色，这就是它受欢迎的原因。很多人总想着吃点稀罕的，结果买回来也不会做，最后烂在冰箱里。黑木耳不一样，买一袋放家里，泡发就能用，厨房里不发愁。
做黑木耳菜最怕两个事，一个是泡发不当，一个是炒得太久。泡发最好用冷水，别图快拿热水猛冲，口感容易散。焯水时间也别拖太长，三分钟左右就够了。热炒时动作要快，木耳一旦在锅里待久了，脆劲就没了。家常菜好不好吃，往往就差在这些小细节上。看着都是一盘菜，实际里头全是手艺活儿。
我家里平时也常做这种低脂菜，老人吃着放心，孩子吃着也不抗拒。两个十岁左右的儿子，平时吃饭也挑，太油太腻的一看就撇嘴。木耳拌黄瓜、木耳炒山药、木耳豆腐汤，这些菜端上桌，往往比大鱼大肉更容易先被夹空。不是孩子多懂营养，而是口感顺，吃着没负担，嘴里还愿意留个余味。
眼下不少人对饮食挺焦虑，一会儿怕油，一会儿怕盐，一会儿又怕吃得没营养。其实日常饭桌不用搞得那么紧张。像黑木耳这样的普通食材，本来就是老百姓厨房里的熟面孔，搭配好一点，火候掌握住一点，饭就能吃得稳当。清淡不等于没味道，简单也不等于将就，家常菜做到位了，一样能把一家人的胃照顾得明明白白。
