入秋第一顿硬菜！板栗烧鸡，软糯咸香，汤汁拌饭能吃两碗|拌饭|板栗烧鸡|栗子|汤汁|米饭|美味菜肴|鸡肉

一场秋雨一场凉。早晚的风里，已经有了一丝干燥的凉意，夏天就这么悄悄翻篇了。

每年一到这个时候，菜市场里的板栗就悄悄登场了。油亮饱满的栗子裹在褐色的壳里，像把整个秋天的甜都攒在了里面。老话说"秋风起，蟹脚痒"，但对家常胃来说，秋风一起，最先想念的其实是一锅咕嘟咕嘟的板栗烧鸡——鸡肉炖得酥烂入味，板栗吸饱了汤汁，糯叽叽地一抿就化，最后留一勺浓稠的汤汁浇在热米饭上……

入秋了，该好好吃饭了。今天这道板栗烧鸡，从备料到出锅只要 40 分钟，不需要任何炫技操作，新手照着做也零失败。趁着栗子正上市，把它端上今晚的餐桌吧。

鸡肉

500 克

板栗

100 克

生抽

2 勺

老抽

半勺

蒜米

5-6 瓣

干辣椒

2 个

青辣椒

2 个

红椒

半个

冰糖

2 小块

八角

2 个

香叶

1 片

生姜

3 片

适量

做法步骤

备料
备好所有食材。鸡肉买新鲜净切的，不用焯水，用盐水浸泡清洗掉血水即可；如果是冷冻鸡肉，需要先焯水。

炒鸡
热锅凉油，放入鸡块，大火炒干水汽，炒至表面金黄、起焦皮。

爆香
放入蒜片、八角、香叶、干辣椒，炒出香味。

上色
倒入生抽和老抽，翻炒均匀上色。

加水炖煮
倒入开水没过鸡块，放入板栗。

焖煮
放入冰糖，大火烧开后转中小火，炖煮 30 分钟，至板栗变软。

调味
出锅前放入适量盐调味。

收汁
放入青红椒，炒至断生，大火收汁即可。注意：汤汁不要收干，留着拌饭一绝！

小贴士

① 用冷冻鸡肉的话，记得提前冷水下锅焯水去腥；

② 收汁时一定留一些汤汁，这是整道菜的精华——浇在米饭上，多吃两碗不是问题；

③ 板栗可以买去壳的省事，喜欢栗子味浓的可以加量到 150 克。
