菇炒干豆腐

食材：五花肉1块，袖珍菇380克，干豆腐半张，尖椒半个，葱姜末适量，大蒜2瓣，郫县豆瓣酱少许，味极鲜酱油2勺，盐适量，植物油适量

做法：

1 备好食材。袖珍菇泡水洗净，把大朵撕成小朵；干豆腐洗净；尖椒洗净

2 五花肉切薄一点的片；干豆腐切菱形片；尖椒切滚刀块；大蒜去皮拍扁切末

3 炒锅放植物油，油温3成热，下五花肉片翻炒，待五花肉变色，放入郫县豆瓣酱、葱姜末、味极鲜酱油炒匀

4 放入袖珍菇和干豆腐翻炒几下，加入半碗清水，烧开后改中火，稍炖一会

5 汤汁还剩少许，放入尖椒，加盐调个味，翻炒均匀

6 放入蒜末，翻炒均匀即可关火装盘

酸菜鱼

食材：草鱼1条、酸菜1小把、鸡蛋白、野山椒、油、盐、鸡精2克、姜5克、蒜5克、料酒、淀粉、白糖2克、香菜、胡椒粉、剁椒

做法：

1.鱼头和鱼骨剁块，把肉切成片。加入盐、料酒、淀粉和少许蛋清腌制约10分钟。

2.酸菜切块，姜蒜，辣椒，小米椒切碎。

3.锅中加油烧热，放姜、蒜末，山椒、小米椒，翻炒，倒入酸菜翻炒后加入足够的开水煮开。

4.再次将鱼头和鱼骨放入锅中煮开，调至中小火，加入盐、糖、胡椒粉调味，加入2汤匙腌制的泡椒水煮约15分钟。

5、将腌好的鱼放入汤里，用筷子摊开，等待鱼煮到颜色变化，倒入少许热油，撒上香菜出锅。

凉拌芹菜花生米

材料：芹菜，花生米，大料，香叶，葱，姜，盐，糖，白醋，酱油

做法：

1、芹菜摘洗干净，锅中加一些盐，油把芹菜焯烫一下过凉。

2、芹菜切小段加一些盐，糖，白醋腌拌一时。

3、花生煮好取出调料控干水分和芹菜一起加一些酱油，香油拌匀即好

清蒸小黄鱼

做法1.小黄鱼洗干净，去内脏，姜切片，葱切段

2.在鱼背上撒上糖，盐，如果加了盐，酱油就可以少放一点

3.倒黄酒，海鲜酱油，海鲜酱油不怎么咸，所以可以加适量的盐

4.放上枸杞几颗，增加色相、可以封上保鲜膜

5.送入蒸箱，100度蒸5分钟！没有蒸箱可以用锅，隔水蒸5分钟！但前提是水先烧开再蒸！

6.蒸箱取出，因为没有附保鲜膜，所以就有点水份，倒一点出去，撒上葱花味精

7.加一点醋提味！

8.这就是保持了海鲜的鲜，原汁原味！

焦糖口袋面包

做法1、苹果去皮切成5—8mm见方的丁。

2、热锅凉油把冰糖融化，炒出焦糖色。

3、把苹果丁倒入锅中，翻炒至苹果析出的水分炒干，焦糖苹果就做好了。

4、面包切掉四周的硬边，把焦糖苹果放在面包中间，再用筷子把两片面包四周压在一起，焦糖苹果口袋面包就做好了。

5、沿着对角线把焦糖苹果口袋面包切开，就可以美美地享用了

青椒爆猪心

猪心是一道上好的食材，不仅能安神，还能补血和养心，睡眠不好，还经常做梦的人吃最合适了。

所需食材：猪心1个，青菜椒3个，红椒1个，生姜蒜蓉适量，淀粉，生抽，料酒，油盐适量。

烹饪步骤：

1. 猪心切片，加入适量食盐，抓拌一分钟；

2. 放入适量淀粉，1勺料酒和1勺生抽，调匀后放置15分钟入味；

3. 起锅烧油，放入姜片和蒜末，爆出香味；

4. 倒入调好的猪心，大火爆炒至表面的淀粉定型；

5. 切成块的青椒红椒倒入锅中，再加一勺生抽，继续大火爆炒1分钟即可

芒果鳕鱼

材料：鳕鱼500g、熟透芒果2个、西洋梨1个、红椒1颗、黄椒1颗、蔬菜汤1份、八角2个、月桂叶适量、红洋葱适量、大蒜适量、海盐适量、麝香草适量、白葡萄酒1小杯、白醋少许、橄榄油适量、胡椒粉适量

做法

1.把红洋葱，大蒜，放入橄榄油的热锅里炒香

2.放入两个切好的熟芒果，一颗黄椒，一颗红椒，加入一小杯白葡萄酒。

3.放入几片月桂叶，两片八角，再放入切好的西洋梨，最后倒入适量白醋。

4.锅里倒入事先煮好的蔬菜汤和两升水

5.将芒果酱汁慢慢煮出一定厚度，这时可以开始煎鳕鱼。

6.将鳕鱼背部鱼皮处，用刀划出三道口子，往切出的口子里塞入一些麝香草和海盐，这样有利于入味。

7.将鳕鱼皮一面朝下，放入盛有橄榄油的锅里煎，撒胡椒粉调味，煎到70％熟将它翻面。

8.等到鳕鱼块一片片打开了，就可以了，現在可以处理芒果酱汁。

9.芒果酱汁煮到一定厚度后，取出月桂叶和八角，然后放入搅拌机进行搅拌，搅拌机打好的酱汁用滤网过滤一下~这样酱汁就会更细腻。

10.做最后的装盘，即可食用。

蒜香胡萝卜土豆条

材料：土豆2个、胡萝卜1根、蒜瓣1个、小葱3颗、盐1勺、鸡精1勺、孜然粉1勺、生抽1勺

做法：1、胡萝卜1根，削皮洗净，用波浪刀切成细条；土豆2个，削皮洗净，用波浪刀切成细条备用

2、蒜1个，剥皮清洗干净切成末备用；葱清洗干净，葱白、葱叶切成末，分开放

3、锅里烧开水，倒入土豆条和胡萝卜煮至8成熟

4、然后捞出来放在凉水里过几遍凉水，要炒的时候再捞起来沥干水份

5、锅里倒入油，油热后放入蒜末、葱白爆香

6、再倒入沥干水分的胡萝卜土豆条，大火翻炒2、3分钟左右，待胡萝卜土豆条熟透后放入生抽1茶匙、盐1茶匙、葱末翻炒均匀

7、起锅前加入适量的鸡精和孜然粉翻炒均匀即可

脆皮豆腐

食材：内酯豆腐300g，油20g，蒜瓣10g，淀粉40g，生抽15g，辣椒酱14g

做法：

1、准备好内酯豆腐，豆腐用活水冲洗、切厚片；蒜瓣拍破切细粒；淀粉用水调匀备用。豆腐片两面均匀沾满干淀粉。

2、锅中油热，放入沾满淀粉的豆腐。中火煎至两面酥黄，盛起码盘备用。锅中余油，爆香蒜粒，加入鲜豆辣椒酱，炒匀。

3、淋入淀粉汁，淋入生抽，调配做好调味汁。调味汁淋在豆腐上即可。

番茄豆腐圆子汤

做法1.准备材料：嫩豆腐切块，番茄去皮切块，香葱切末备用

2.准备圆子肉...

3.先加入少量豆粉（用少量水化开）

4.再依次加入佐料：豆瓣酱、盐、味精、花椒粉、蛋液，朝一个方向搅拌上劲

5.另一个鸡蛋加入剩余蛋液..加盐打匀

6.锅中热油..倒入鸡蛋煎熟、炒匀

7.锅中倒入开水..下入番茄、豆腐..待水烧开

8.水开后..用勺逐个下入圆子煮熟即可

蒜薹炒牛肉

材料：蒜薹，牛肉，小米椒，姜，蒜，盐，蚝油，酱油，油，白酒，香油，料酒

蒜薹切小丁，小米椒切碎，姜、蒜切片待用。

牛肉切小薄片，用料酒、酱油、耗油，油、孜然粉、少许盐拌匀腌制20分钟。

锅里放油，油热下蒜薹翻炒，中火炒至断生，加适量盐炒匀盛出备用。

热锅下油，下姜片煸香，放入腌好的牛肉快速翻炒，下蒜片翻炒，可沿着锅边倒小半瓶盖的白酒，滴几滴香油，快速翻炒15秒。

倒入炒好的蒜薹翻炒均匀即可。

尖椒肉丝

做法1.肉切丝，用一点盐、白胡椒粉、花椒水老抽淀粉拌匀，腌制十分钟；青红尖椒、洋葱切丝；葱切斜段、姜蒜切末；取一小碗，将生抽、盐、淀粉加清水拌匀

2.热锅凉油，油温六成热时下肉丝滑散

3.肉丝全部变色后沿锅边淋入白酒，放姜蒜末翻炒均匀，盛出

4.盛肉丝时尽量将油控在锅里，油再次升温，放入葱段炒香

5.放入尖椒丝翻炒

6.尖椒稍软拨到锅边，放入洋葱翻炒一分钟

7.将肉丝放入，并放入调好的料汁，试下咸淡再决定是否加盐，翻炒均匀就可出锅

三汁焖锅

食材：鸡翅适量，土豆适量，胡萝卜适量，洋葱适量，青虾适量，小鲍鱼适量，大蒜适量，蚝油1勺，甜面酱1勺，番茄酱1勺，生抽2勺，蜂蜜1/2勺，食盐适量，葱适量，姜适量，五香粉适量，白糖适量，海鲜酱油适量，料酒适量，鸡精适量

做法：1、清洗干净鸡翅中，每面划两至三刀。鸡翅中放入1勺料酒、1勺海鲜酱油、适量五香粉、白糖、鸡精，腌制4小时或过夜。

2、腌制好的鸡翅中，腌制汁留着备用，土豆、胡萝卜、洋葱切小块，可以加入其他喜欢的蔬菜。

3、加入五香粉、食盐、生抽拌匀备用，青虾洗净开背备用，小鲍鱼洗净切花刀备用。锅中倒入适量植物油，比正常多加1汤匙油，放入鸡翅中，双面煎至金黄色夹出备用，锅中留底油，盛出1汤匙熟油放入碗中备用。调制调料汁，蚝油、甜面酱、番茄酱、蜂蜜、生抽、熟植物油、食盐调匀备用。鸡翅中背面刷一层调料汁备用，锅中带底油，直接放入土豆、胡萝卜、洋葱、大蒜，开中火焖12分钟，时间到后加入腌制汁，拌匀。上面摆好鸡翅中、青虾和小鲍鱼，鸡翅中正面朝上，表面刷一层调料汁，剩余调料汁均匀刷在各处，中火焖10分钟，关火再焖3分钟。

材料：土豆300克，香葱10克，火腿15克，盐10克，味精5克，胡椒粉5克，鸡粉5克，料酒5克，面粉20克，鸡蛋10克。

做法：

1、首先将土豆去皮洗净后放入蒸锅，蒸熟备用

2、香葱切末，火腿切丁

3、接下来把蒸好的土豆用刀碾成泥后放入碗中，再加入盐、味精、胡椒粉、鸡粉、料酒、清水20克左右，再加入面粉、鸡蛋，然后放入香葱末，火腿丁搅拌均匀后，用手团成小饼备用

4、待锅烧热后下入色拉油10克左右，把土豆饼放入锅中，改小火煎至两面金黄

5、最后将煎好的土豆饼出锅装盘即可
