梨树在中国长了三千年，比人活得长。

《诗经·秦风·晨风》里写“隰有树檖”，檖就是梨。

汉代上林苑已种梨，唐代宫廷设梨园教乐舞，后世戏曲行当便叫梨园行，演员是梨园弟子。

一棵树从《诗经》走进戏文，日子就厚了。

民间对梨有讲究。

孔融让梨，让的是礼。

梨不能分着吃，因“分梨”谐音“分离”，老人忌讳。

梨花白得像一场短雪，岑参写雪才说“千树万树梨花开”。

花开时热闹，落时也快，像人世间许多团圆。

梨性寒，能润肺，老北京熬秋梨膏，小火慢收，收的是秋冬的燥。

名梨有莱阳梨、砀山酥梨、赵州雪花梨、库尔勒香梨。

上海松江永丰街道，黄浦江上游，老早叫仓桥镇。

元代1340年，词人张之翰调任松江知府，写了《婆罗门引·赋赵相相宅红梨花》夸梨花。

清嘉庆《松江府志》记着松江各地零星种梨。

民国年间华亭县仓桥、泖港一带已种300多亩。五六十年代上海农科院搞杂交育种，七十年代育出"早生新水"。

2011年2月21日获国家地理标志保护，数百年的家底，硬是被一棵梨树给扛住了。

这梨长在太湖流域碟形洼地底部，青紫泥土壤，pH值6左右，黄浦江源头水养着，干净得很。

果型圆润，皮薄乳黄透亮，跟水晶似的。

果肉雪白细腻，石细胞极少，咬一口汁水直冒，可溶性固形物12.5%以上，甜得不腻。

当地人讲"侬尝尝看，老灵额"，冰镇两钟头再吃，脆甜沁凉，暑气全消。

一口下去，是江南水土攒了几百年的味道。

砀山酥梨，安徽砀山县的命根子，黄河故道沙地里长出来的宝贝。

这梨有近3000年栽培史，明万历年间《徐州府志》就载"砀山产梨"，

清雍正十一年《铜山县志》写"黄里石榴、砀山梨"，李时珍《本草纲目》夸它"润肺凉心，消痰降火"。明万历、清乾隆年间列为贡品，那是皇家桌上的东西！

新中国治沙种梨，巅峰50万亩连片，人称"梨都"。

这梨近圆柱形，平均单果重250克，大的1000克往上。

皮薄到弹指即破，咬一口汁水顺着嘴角淌，肉白如玉，酥脆化渣，甜到嗓子眼儿。

当地人吃法也——生吃、蒸冰糖川贝、榨汁兑蜂蜜、熬梨膏、煮西米露，秋天一碗冰糖炖梨，暖到心窝子。

老辈人讲"砀山梨，皮儿薄，落到地上找不着"，嘿，还真是这么回事儿！

说起北京的梨，头一号得提门头沟军庄镇的京白梨。

这玩意儿有400年光景了，打明代起就是皇家贡品，清同治年间正式入宫，据《宛平杂谈》载，宫廷朝中必备。

传说乾隆爷口干咳嗽，吃了这梨竟好了，钦点为贡品。

嘿，您说邪不邪？

1954年北京梨品评比会上夺了魁，正式冠"京"字。

1959年国庆10周年摆上国宴，全国闻名。2023年9月入选第七批中国重要农业文化遗产。

军庄镇核心产区现存百年古梨树600多株，最老的在东山村，两百多年了，真叫一个沧桑！

这梨扁圆，单果93克上下，皮黄绿放放变黄白，果肉细腻汁特多，甜里带香。

当地人讲"八成熟采九成熟吃"，后熟7到14天变软，咬一口水直淌。

除了生吃，还能蒸着来，拌酸菜丝也成，拿它熬秋梨膏更是一绝，润燥化痰。

这梨就认军庄那方水土，别的地儿真种不出这味儿。

您要赶上9月去门头沟，嘿，"这梨，地道！"

说起冠县鸭梨，那得从汉代说起。

相传光武帝刘秀路过梨园，一梨砸脚前，尝了一口满口生津，封了"御封梨树王"。

这树几经枯衰又萌发，到清康熙八年（1669年），兰沃乡王泰在旧址重育，三百多年了，年产两千多斤，人称"梨树王"。

冠县地处黄河故道，砂壤土pH值7.4至7.8，日照2454小时，九月温差达10℃，千年栽培，"鸭梨甲天下"真不是吹的。

2006年5月24日获国家地理标志保护，九月前后上市。

这梨因果柄像鸭头得名，单果重180至280克，可溶性固形物≥12.0%，皮薄核小，石细胞少，一刀下去汁就淌。

当地人冬天整个蜂蜜蒸梨，挖核填蜜隔水蒸，润燥止咳；要么冰糖炖梨加银耳枸杞，去火养颜。

咬一口，脆甜清香，汁水顺着嘴角淌，"搁这儿，这梨真中！"

说南果梨，得先唠它的来头。

清光绪二十年秋，鞍山千山对桩石村高永庆上山，闻着奇香寻到一棵碗口粗的野梨树，黄里透红落果满地。

女婿带梨去辽阳，南来北往的梨客尝了直夸"具南方诸果之长"，遂定名"南果"。

还有传说南方老鹰叼籽吐在千山向阳坡，落地发芽便成了树。

祖树至今150多年，1984年评上辽宁省优良品种，2005年拿了国家地理标志保护。

这梨扁圆带红晕，单果50到75克，刚摘硬得硌牙，搁十来天后熟变软，

果肉细糯多汁，甜酸适口，关键带股天然酒香，闻着就馋人。

当地人吃法野，鲜啃、炖排骨、泡梨酒、晒梨干，还拿梨汁焖五花肉，果香裹肉香，那叫一个得劲儿！

"哎呀妈呀，这玩意儿搁嘴里就化了！"东北银就好这口。

泊头鸭梨，河北沧州泊头市的命根子。

这梨的来头大了去了——据《史记·货殖列传》载，西汉时"常山以南，河济之间千树梨"，泊头正处这地界，两千多年前就成规模了。

传说隋炀帝出游江南在此泊船赏梨花，留下"梨花香透千万家"，泊头便因此得名。

《清一统志》记"交梨"属交河物产，康熙年间《河间府志》称"交河之梨，其味香而脆"。

2000年获"中国鸭梨之乡"，2004年拿下国家地理标志保护。

两千年风沙咋吹，这味儿愣没散。

九月上市的鸭梨，果皮薄到透光，咬一口"咔嚓"脆响，汁水直往外蹦。

甜度12%到16%却不齁，果酸配糖很妙——先甜冲舌尖，再酸慢悠悠泛上来，末了回甘拖老长。

雪白果肉致密松脆没渣，嚼着跟含块"会化的白玉"似的，核周都甜，不像旁的梨近核发酸。

当地人讲这梨"三不粘"——不粘牙、不粘手、不粘刀，嘿，切开果面光溜溜的。

窖藏仨月甜度再涨两三度，汁水绵柔似蜜，炖甜品正好。

泊头那冲积平原潮土疏松，地下水浅，梨树根扎得深，两千年的土养出来的东西，差不了。

说起孟津梨，那是河南省洛阳市孟津区会盟镇铁炉村一带的宝贝，栽了2000多年。

《齐民要术》白纸黑字："洛阳北邙，有张公夏梨，味甚甘，海内唯有一树。"

自西汉起就有人种，唐代直接列为贡品。

老辈人讲，明朝末年铁炉村徐姓梨农拉两船梨外卖，偏逢乱世烂了大半，赶上皇后害病想吃梨，梨进宫皇后竟好了，皇帝赏银千两，"贡梨"名号就此传开，

孟津落了个"中国伏梨之乡"。

这梨到底好在哪？

天生伏梨短葫芦形，黄绿色皮，落地即酥，人称"洛阳金桔"。

咬一口皮薄肉细，汁水直迸，甜里挂酸，渣少。含可溶性固形物12.3%、还原糖9.7%、维生素C7.2%，润肺止咳。

当地人拿它炖冰糖雪梨，梨皮梨肉冰糖一块儿下锅，小火咕嘟十分钟，撒把红枣枸杞——嘿，中！

隰县梨，山西临汾隰县的命根子。

这地方在晋西吕梁山南麓，黄土高原残塬沟壑区，海拔千米往上走。说起种梨，两千五百多年了。

《诗经·秦风·晨风》写得明白："山有苞棣，隰有树檖"，"檖"就是梨，这是中国最早记梨的文字。

明清那阵子，"隰州金梨"直接端上皇家桌，贡品！

隰县人嘴上不说，心里透亮——祖辈种梨，种的是穷日子里的盼头。

每年9月10日后才开摘，急不得。

吃法上讲究。

老金梨去核塞枸杞姜片蒸，治咳嗽；红烧肉片跟梨片码一块上笼，叫梨花肉，肥而不腻，入口即化。

再就是小吊梨汤，银耳百合慢炖俩钟头，秋天来一碗，啧，舒坦。

玉露香梨是省农科院1974年拿库尔勒香梨和雪花梨杂交育的，皮薄核小，果肉酥脆无渣，可溶性固形物12.5%到14.0%，单果重236克往上，可食率90%以上。

隰县人讲："吃一口、流一手，顺着脖子往下走。"

三千年黄土养出来的东西，不是吹的。

说起中国顶好吃的梨，山东莱阳的梨那是头一份。

这玩意儿种了四百年往上，明末清初就有了，《莱阳县志》载"梨出昌山者佳"，说是邑人从茌平带回梨芽嫁接的。

更神的是传说——古有董姓书生赶考病倒五龙河畔，遇老者赠梨，入口即化如蜜如乳，病好了还中了状元，公主尝后惊呼"天生甘露"，遂列皇家贡品。

还有大明万历年间，赵格庄宋太公给老娘熬梨治咳嗽，机缘巧合结识回省亲的王太医，得了宫廷秘方熬出梨膏，专治肺病咳嗽，传开了去。

唉，一棵梨树，半部胶东史。

莱阳梨皮糙带褐斑，模样不咋俊，咬一口嘎嘣脆，汁水嗞一下蹦满嘴，甜度14%往上，糖酸比28:1，果肉细得没渣。

当地人拿它炖汤，梨汁大虾、老鸭梨煲海参都是莱阳梨宴的硬菜。

五龙河沙土地含云母多，根扎得深，糖攒得足——"俺就说嘛，这梨甜到心眼儿里！"

说梨，得说库尔勒香梨。

这玩意儿是新疆巴音郭楞蒙古自治州库尔勒市的特产，国家地理标志产品。

据考证，西汉张骞通西域是把内地梨种带过去的，距今2000多年。

晋代葛洪《西京杂记》写"瀚海梨，出瀚海北，耐寒不枯"，这是史书头一遭记它。

清代萧雄《新疆杂述诗》赞它"皮薄肉丰，心细甜而多液，入口消融"，说品第当属第一，敢比"哀家梨"。历代贡品，皇帝桌上的东西。

这梨啥样？

果形小，80到150克一个，皮黄绿色带红晕，咬一口——嚯，汁水炸满嘴，肉细酥脆没渣，糖度11到14度。

当地人拿它冰糖炖梨，去皮挖核塞冰糖，蒸俩钟头，润肺得很嘛。

秋天燥得慌，啃两个，浑身舒坦。

聊了这么多，到底哪里的梨最好吃？

这话问不住人。砀山说砀山的，莱阳说莱阳的，库尔勒说库尔勒的。
