不差钱的中老年人，别总是啃鸡肉啦！这4样高蛋白食物，低脂又美味|清蒸|牛肉|胡萝卜|虾肉|里脊|高蛋白食物|鲈鱼|鸡肉

人到中年，家里一桌饭，真不是把肚子填满就完事了。很多人一提高蛋白，脑子里先蹦出来鸡胸肉，觉得那玩意儿省事，天天吃也不差。可真要较真，老吃一种食材，嘴巴容易腻，家里老人孩子也未必都受得了。像素材里说的这4道菜，虾、牛肉、里脊、鲈鱼轮着来，蛋白够，脂肪不高，做法也都不拧巴，正适合中年人一家老小的饭桌。

这事儿的核心，其实就两点：一是别把优质蛋白只盯在鸡肉上，二是中老年人的饭菜要讲究好消化、少负担。虾、牛肉、猪里脊、鲈鱼，这几样在营养上各有门道，做法上也都能往家常里落。大火快炒、清蒸、少油少盐，这些路数不是装样子，是实打实让一口饭吃得顺当。

先说香辣油焖大虾。大虾这东西，山东人也熟，过年过节桌上少不了。虾肉的蛋白质含量高，脂肪却不算多，100克虾肉通常能提供十几克蛋白，关键是肉质嫩，老人咬得动，孩子也爱吃。素材里先把虾裹淀粉再下锅炸，壳肉分离后再回锅炒料汁，这一步挺重要，外壳会脆，虾肉不容易老。

这个做法里，小米辣、蒜粒、葱段、香菜一上场，香味就出来了。料汁用生抽、蚝油、白糖、胡椒粉、鸡粉调一调，咸鲜里带一点微辣，正合下饭。做虾最怕油一多就腻，所以底油别手重，能挂住锅底就行。虾本身鲜味足，不用靠一锅油撑场面，山东老话说得实在，食材好，别瞎糟践。

再看莴笋炒牛肉。这个组合就很会过日子，牛肉负责顶饱，莴笋负责清爽。牛肉补铁、补蛋白，这个很多人都知道，尤其是上了年纪之后，饮食里适当有点红肉，对体力和营养摄入都有帮助。按照中国居民膳食指南的思路，成年人要注意优质蛋白来源多样化，不是顿顿靠鸡肉撑着，鱼虾肉蛋奶都得轮着来。

牛肉最怕两件事，一个是切得厚，一个是炒得久。素材里把牛肉切薄片，先用生抽、蚝油、胡椒粉、淀粉抓匀，再快速滑炒，这样肉才嫩。莴笋丝先用盐腌10分钟，再冲洗挤干，能去掉一点生涩味，炒出来脆生生的。红椒和蒜末起香，牛肉回锅后大火翻几下就能出锅，这种做法看着简单，其实挺考验手脚麻利。

莴笋这菜也别小看。水分足，口感清脆，膳食纤维也有点分量，配上牛肉，一荤一素搭在一起，胃里不发沉。中年人吃饭最怕那种油汪汪、糊嘴巴的菜，吃两口就困，这道菜就不这样。清爽里带点肉香，吃完还能再来半碗米饭，痛快。

第三道是胡萝卜炒里脊丝。很多家庭做猪肉，第一反应是五花肉，其实里脊更适合家常快炒。里脊脂肪含量低，瘦而不柴，配胡萝卜正合适。胡萝卜里的胡萝卜素，是脂溶性的，适量油炒更容易吸收，颜色也好看，橘红配嫩白，一端上桌就有食欲。

里脊丝先用老抽、淀粉和食用油抓匀，这个腌法很关键。淀粉锁水，油把肉丝裹住，炒的时候水分不容易跑，肉就不干。里脊丝下锅快速滑炒，熟了先盛出，接着炒胡萝卜丝，再把肉倒回去，生抽、蚝油一调，葱花一撒，香气一下就出来了。这个菜最适合牙口一般的长辈，软软的，细细的，吃起来不费劲。

现在很多人爱追着所谓轻食跑，结果一盘生冷沙拉，吃完肚里还是空的，晚上照样想找点热乎的。家常炒菜不是落后，是讲究火候和搭配。里脊肉配胡萝卜，既有蛋白，也有蔬菜，颜色、口感、营养都照顾到了。比起重油重盐的硬菜，这类菜更像山东人的性格，稳当，不花哨，管饱还不折腾人。

第四道清蒸鲈鱼块，放在这几道里特别像压轴。鲈鱼这个食材，很多家庭逢年过节都愿意买，原因很简单，肉嫩、刺少、腥味轻。鲈鱼蛋白质含量高，脂肪相对低，清蒸最能保住它的鲜。素材里先用姜片和料酒腌5分钟，再大火蒸8分钟，蒸好后把腥水倒掉，这一步不能省，省了就像穿着胶鞋下地，怎么都不清爽。

这道菜的灵魂不在调料多，而在火候准。蒸鱼豉油加一点生抽，淋上去以后，再铺葱丝，最后一勺热油泼下去，香味立刻往上窜。鲈鱼肉细，几乎没有硬刺，家里有老人和孩子吃起来更放心。清蒸这路做法，少油少盐，鱼的鲜味会更明显，不用靠重口味撑面子。

说到鱼，很多家庭最常见的问题不是不会做，而是怕腥。其实处理得当，鱼腥味没那么吓人。去掉血水、蒸好后倒掉盘底汤汁、热油激香，这几个动作连起来，鱼就干净了。鲈鱼在中国人餐桌上一直很有存在感，古人就爱吃鱼，到了今天，讲究的不是排场，是吃得舒服，身体轻松。
