简直太香——这份早餐做法很简单——全家一致称赞好吃，直接光盘|bat|光盘|小火|早餐|煎饼|紫米|豆腐|鸡翅

我家老二上午刚做完作业，冲我眨巴两下眼，说今天早饭你别整太复杂。我回头看看桌上，已经把鸡翅腌好了，粥也在锅里咕嘟咕嘟响，最后再下锅煎一锅韭菜豆腐肉煎饼。说实话，我原本也没打算多折腾，结果等一端上来，全家那种哇，太好吃了的劲儿就上来了，两个小家伙十来岁的胃口跟运动员似的，全光盘。

那天我就琢磨明白一件事，早餐要想让人真吃得下去，关键不是摆花架子，而是得把蛋白质搭得明白，还得把口感做得稳。尤其家里有两个男人，碗里少点肉都不行。

早餐我这套搭配里，主食一上来先抓住人。韭菜豆腐肉煎饼，看起来是煎饼，吃起来是软嫩鲜美的那种。它不是那种干巴巴的饼，而是咬下去有汁感，香气也不冲。

我自己做的时候一共煎了14个小的和1个大的，结果一上桌，没撑两分钟就没了。我当时都懵了，心里想我是不是做少了。后来才发现不是我做少了，是孩子和大人饿得正好，嘴也正馋。

很多人的早餐只顾碳水，面包、粥一端，吃两口就开始犯困。可蛋白质得跟上，早上才撑得住。韭菜豆腐肉煎饼这口，里面鲜肉加豆腐，韭菜再点睛，面粉负责成型。

你要说它凭啥营养更像样，那就看结构。豆腐是植物蛋白，肉是动物蛋白，蛋白质的来源更丰富。韭菜有独特香气，别小看那一点点，它能把整锅味道拉起来。

还有个好处是成本低。肉饼子有时候要满满一盘肉，价格一上来就心疼。用豆腐分一部分，口感不差，味道还更软嫩，家常又划算。

做法也不刁钻，新手真能上手。你不用揉面，也不用把馅包得像做手工。拌一拌，煎一煎就行，锅一热，按步骤来就行。对我这种早上要兼顾孩子和父母的人来说，这种简单反而最重要。

我一般用的是豆腐捏碎，加肉末拌起来，再加盐、黑胡椒粉、酒、酱油。搅匀以后把韭菜和面粉加进去，少加点水拌到能成团。用手团成小团子再轻轻压扁下锅，盖锅盖小火慢煎。

翻面这点得守规矩，一面金黄翻另一面就行。你越爱翻，它越容易散。煎饼这事儿很像跟人说话，别一会儿问东一会儿问西，先把一件事做稳。

说到这里，有人就会问，早餐就一个煎饼够不够。对我家这种饭量不小的组合，得再补一轮动物蛋白。那天除了煎饼，我还烤了鸡翅。

现在家里谁嫌麻烦呢，我嫌麻烦。烤鸡翅比煎的更省事，而且更干净。腌制一下，空气炸锅一烤，基本不用人一直盯着，也没油烟熏火燎那种烦劲儿。

鸡翅我一般是两面切二刀，方便入味。调料我用的是奥尔良烤肉料，粉末的那种。为啥选它，简单。就是懒得现配，也懒得翻来覆去试味道。腌的时候不需要太多水，粉末融化抓匀就好。

具体时间也好记，我用空气炸锅大约200度，鸡翅15分钟，翻面再烤5分钟左右。垫上炸锅纸，后面清理也省事。孩子爱那种颜色，外面金灿灿，里头嫩得很。

外面买的奥尔良有时候贵，几块钱的料在家能用挺久。我自己也吃过，确实不比外面差。真要说区别，也就是少了排队和广告，多了家里人的味道。

前几天我还烤过牛排、羊排，还有土豆。很多人问我怎么腌制，我的答案还是那句，别老纠结复杂配方，买现成的烤肉料就行。尤其对带娃带家务的人来说，时间就是成本。

再说到主食，我这几天的选择比较固定。每天炖一锅莲子绿豆紫米粥。夏天我就爱这口，原因也不用太玄乎。绿豆偏清凉，莲子偏宁心安神，紫米补点气血味道也好。三样放一起，喝起来更顺，家里老人也喜欢。

粥我会加一点白芝麻，更香。冰糖也少量放，口感软糯但不过分甜。那种微甜的感觉很适合早上，孩子也能接受。

关键点我也记得挺清楚。紫米是现在的新米，头茬的，香味更明显。绿豆个头不大，小小的看着普通，可它有胚芽，感觉更有活性。煮的时候不用泡，容易开花。

做这锅粥我也有个小经验，紫米别淘洗太多。轻轻洗一次就行。你要是反复洗，紫色溶解在水里就浪费了，颜色淡了味也差点意思。

时间我按流程来：绿豆、紫米、莲子一起下锅，加足量水大火煮沸，转小火定时40分钟，最后10分钟加入老冰糖。搁着等就行，手上忙别的，锅里自己做。

除了粥，我还会给每人一根玉米。粗粮这玩意儿得按天吃，肠道蠕动起来，胃也舒服。玉米能补点维生素，对老人孩子都合适。

最后还得有点清口菜，拍黄瓜就是我家的固定节目。脆脆甜甜，既鲜又不腻。那天黄瓜还是我妈自己种的，生吃都觉得水灵。你要是只吃煎饼和鸡翅，油脂和碳水叠在一起，容易撑。黄瓜一上，口腔立刻清爽。

拍黄瓜做法简单，黄瓜拍一拍，盐、酱油、糖、醋拌一拌。要吃辣的可以加点辣酱，我家不吃辣，就省了那一步。最后我还会加一勺肉酱，味道更落地，更有饭搭子的感觉。

有人问我为啥这么爱讲这些步骤。原因很实在，家里人多，吃得讲究但也得省心。早上七八点的时间特别紧，父母年纪大，孩子上学也要赶节奏，我不想把早餐做成实验室。

还有一点，我特别在意蛋白质这件事。早餐必须有足够蛋白质，不然上午两三个小时就开始蔫。你要是问我凭什么这么笃定，那就从我家吃过的结果里看。煎饼里有肉和豆腐，鸡翅也是动物蛋白，粥是主食但不是唯一蛋白来源。

家里老人喜欢软糯，孩子喜欢香味，两个男人喜欢吃得有劲。我这套就是把三种需求都顾上了。你看那天煎了十四个小的和一个大的，说明不是光好看，是真能吃。

我最喜欢的场景其实是上桌那一下。筷子一动，家里人先夸再吃，吃完还说再来一盘。你要他们不说，我也不信。因为那种香味不是靠嘴上说出来的，是靠豆腐肉馅的软嫩，靠韭菜的鲜香，靠鸡翅烤出来的嫩。

你以为这就结束了？没有。吃完以后桌面得收得干净，余下的饼基本也都光盘。全光盘这事儿很能说明问题。做饭不是为了拍照好看，是为了让家人吃舒服，吃出力气。
