材料：鳜鱼250克，冬笋50克，鸡蛋清25克，淀粉13克，腌雪里蕻25克，黄酒10克，猪油30克，盐1克，味精1克。
做法：
1.鳜鱼肉先切成4 厘米长的段，再顺丝片成宽2 厘米、厚0.1 厘米的片。
2.鱼片放在碗中，加入精盐、鸡蛋清、味精，用湿淀粉10克（淀粉5克加水）上浆。
3.培红菜（腌雪里蕻）切成末。
4.炒锅置旺火，下入熟猪油，烧至四成热，把鱼片放入锅内，划散，至鱼片发白时捞出。
5.炒锅内留底油，回置火上，投入培红菜末和熟笋片煸炒，烹入黄酒，加进清汤，再将鱼片落锅烧沸，加入味精、用湿淀粉勾芡，淋上熟猪油即成。
食材：鲜鸡700克；泡椒10个；酱油1汤匙；青椒2个；黄酒2汤匙；大蒜6粒；青蒜苗2根；菜籽油5汤匙；冰糖1汤匙；草果2粒；八角2粒；花椒粉2茶匙；郫县豆瓣2汤匙；泡姜3大块
做法
1、将泡姜和大蒜切成稍厚的片，泡椒、青椒、青蒜苗切成段。
2、土豆切成块，并用清水泡去淀粉。
3、鸡洗净后，斩成块。
4、炒锅烧油，油烧至泡末融化稍微冒青烟后，放凉，再放入冰糖。
5、用小火炒到冰糖融化并起红褐色泡沫。
6、马上放入鸡肉炒匀，加入泡姜、黄酒、八角和草果，用中小火炒5分钟，至上色。
7、放一半大蒜片，调入豆瓣酱、酱油炒香。
8、放入土豆块。
9、往锅里注入清水，没盖住土豆块。
10、1烧开后，加盖，用中小火焖煮，至土豆用筷子可以插透（约8分钟）。
11、待锅里还有一半汁水时，放另一半大蒜片、泡椒、青椒、青蒜梗烧2分钟。
做法：1.鸡胗清洗干净后切薄片，加姜末，红剁椒，料酒腌制20分钟左右；
2.长青椒洗净去籽切段，葱姜蒜切片；
3.热锅下油，油热后，依次下入花椒，姜、葱、蒜炒香；
4.放腌好的鸡胗片大火翻炒至断生；
食材：鲤鱼、玉米、蒜苗、胡萝卜丁、生姜、香葱、面粉、淀粉、亨氏番茄酱、白糖、香醋、水淀粉
做法
1、鲤鱼一条，清洗干净，鲤鱼去掉筋后。从头部那头开始，倾斜约45度角，把鱼打上花刀，然后在距离约3厘米的地方接着片上一刀，一直片完。
2、打好花刀的鱼放入较大的盘里，均匀的抹上一层料酒和盐，然后加入拍碎的生姜、葱白，抓匀腌制半小时，去腥、入味。
3、把面粉和淀粉混合在一起，加入少许水，搅拌成一碗浓稠的面糊。腌制好的鲤鱼，去掉葱、姜，两面均匀的挂上一层面糊。
4、放入烧热的油中炸至表皮定型，再转中火炸熟，然后大火复炸一遍，至外酥里嫩，捞出沥油后摆入盘中。
5、锅中烧开少许水，放入一次玉米、胡萝卜、蒜苗，焯至断生，捞出备用。
6、料汁：倒约五汤勺的亨氏的番茄酱，调入白糖和香醋，搅拌均匀。
7、锅中加入少许油，倒入料汁中小火翻炒至起大泡，调入少许水淀粉勾薄芡。倒入焯好水的蔬菜丁拌匀，关火淋入几滴明油。
番茄炒豆腐
材料：番茄一个，豆腐一块，毛豆一小把，盐，番茄酱。
做法：
1、取出适量番茄酱放入小碗中，加少许清水稀释。
2、将豆腐切块，番茄切滚刀块。
3、毛豆腐解冻洗净备用，把豆腐和毛豆分别在沸水中焯烫。
4、炒锅倒入适量油，烧热，放入姜和蒜片爆香，再放番茄块翻炒。
5、放入豆腐炒熟后，放入豌豆和番茄酱汁、盐、炒匀即可出锅
青椒炒腊肉
做法： 1.准备好青椒腊肉腊肠等原料。
2.将腊肉腊肠切片待用。青椒，红椒切块。
3.起油锅，爆香蒜头，将腊味入锅炒至透亮。
4.加入青红椒一起煸炒。
5.盐锅边溜点清水（一点点））加盐，生抽调味。
6.炒至青椒断青就可以盛起上桌了
花椒鱼片
材料：鱼身肉、金针菇适量、干尖椒，花椒、盐、生抽、鸡精、淀粉、鸡蛋、姜丝
做法：
1.将鱼身，切成薄片，加盐、生抽、鸡精、淀粉及一只鸡蛋拌匀，腌15-30分钟。
2.将金针菇烫熟，取出后置于汤碗内。
3.放入清汤，加盐，姜丝，鸡精调味。待汤沸后，放入腌制好的鱼片。九成熟连汤盛入已垫有金针菇的汤碗内。
4.放油入锅，稍热就加干尖椒，翻炒几下，再加入花椒，同样翻炒几下即可
麻婆豆腐
用料：大豆腐，瘦肉末，小葱，郫县豆瓣酱，花椒，大蒜，盐，鸡精，淀粉
做法：
1.豆腐切小块，瘦肉剁成肉末，葱白切段，绿叶部分切葱花，蒜切末。
2.锅中添水把豆腐放进去小火煮一会儿，捞出备用。
3.锅中放油烧热后放入花椒小火慢炒，再放入葱段爆香。
4.放入肉沫炒至变白。
5.放入豆瓣酱翻炒均匀。
6.添水差不多将盖过肉末，小火炖煮一会。
7.放入豆腐小火炖煮，让味道渗入豆腐中放少量盐，因为豆瓣酱有咸度。
8.待汤汁差不多时放入葱花和蒜末，再调入淀粉芡汁，轻轻翻炒均匀，盛出装盘。
鸡胗土豆球
食材：鸡胗200g、土豆球200g、油适量、盐适量、尖椒适量、葱姜适量、酱油半勺、蚝油1勺、糖2g、花椒油少许、大料1颗、老抽适量、料酒1勺
做法：
1、鸡胗泡洗干净。2)在鸡胗上划出花刀。
3、划好的鸡胗再用清水泡洗出血水。
4、锅中放清水，把鸡胗焯烫。
5、换清水，加入老抽，料酒，大料把鸡胗煮十多分钟去腥上色。
6、捞出备用。7)土豆球解冻。8)抖上干淀粉。
9、下油锅炸至金黄。10)炸好的土豆球控油。
11、锅中留底油，下葱姜炒香后加入鸡珍和土豆
12、加入蚝油，酱油，盐，花椒油，尖椒片炒匀。
13、点水淀粉，点明油出锅。
溜小油菜
食材：小油菜 、盐、酱油、醋、水淀粉、姜、葱、花椒油。
做法：1、将小油菜清洗干净，切段装盘待用，热锅放油，爆香葱姜末。
2、倒入小油菜煸炒，放入精盐，醋，酱油。
3、翻炒均匀后，用水淀粉勾芡，淋入花椒油，出锅，装盘即可。
芹菜虾仁
做法：1、用水将芹菜洗干净，再切成片状，然后打一盘热水并倒入一些盐
2、将虾仁放进去过一遍后取出来，用冷水冲洗一遍。
3、将处理好的食材放在一起，加适量调料，搅拌后就可以食用了。

材料：菠菜，姜1小块，生抽，芝麻油，白砂糖少量，盐少量，鸡粉。
做法
1、菠菜去根,洗净,切成6厘米左右的段，向锅内放入适量的水,煮沸,放入菠菜焯熟。
2、将菠菜捞出,过冷水,沥干水分，将沥干的菠菜紧紧的压入一平底的容器内。
3、姜切末,将姜末生抽,芝麻油,少量的盐,鸡粉和糖调成均匀的调味汁。
4、将压紧的菠菜倒扣在盘子里。
