大量上市！吃萝卜其实不如吃它，营养更高又能润肺健脾，随手一煮更是比肉鲜美|润肺|牛肉|白萝卜|秋天|秋藕|美味菜肴|莲藕|虾仁|青椒

入秋以后，菜市场总有一种“白萝卜上头”的氛围。大家一买就是一大捆，觉得清清爽爽、润一润就对了。可我每年看着脾胃偏弱的家里人，吃两三次白萝卜就开始肚子不舒服、胃里发冷的时候，就会忍不住想：咱能不能别把“润燥”理解成一种通吃的万能药？

我更偏爱秋藕。不是那种听起来很玄的滋补，是切开以后就闻得到的清甜、入口那种温润劲儿。老话说“荷莲一身宝，秋藕最补人”，我觉得特别贴近生活：秋天干、燥、容易上火的人很多，但一味猛吃凉的也不行。白萝卜偏凉，秋藕相对更温润些，很多家里人吃起来更舒服。

而且秋藕真的是“配什么都不输”。它的鲜味不需要靠重调料堆出来，炒、煎、煮汤都好吃。对我来说，最重要的是：做法省事、全家都能吃得下去。小孩吃藕不抗拒，老人也不会觉得太硬太刺激，老公更是那种看到清爽菜就会多扒两口饭的人。

我这几年给家里轮换着做，今天就把我最常端上桌的四道莲藕家常菜分享出来，做一次你就知道为啥大家到了秋天都想囤点藕。

第一道：脆藕清甜炒虾仁玉米粒点亮秋天味道

这道菜我喜欢的原因很直白：低脂清爽，还特别省心。虾仁滑嫩、玉米清甜，莲藕又脆又有汁感，一口下去是那种“秋天在嘴巴里转圈”的感觉。

食材准备一共不复杂：脆藕一节、甜玉米一把、鲜虾仁、蒜片；少许盐和料酒就够了。

虾仁先处理：挑去虾线，洗净后加点料酒抓匀，腌十分钟。莲藕去皮切小丁，切完怕发黑，我会直接泡在加白醋的清水里，省得做饭做一半变色影响食欲。玉米剥粒。

锅里烧水，水开后把藕丁和玉米粒焯一分钟就捞出来，沥干。接着热锅下少许油，蒜片爆香，把腌好的虾仁大火滑炒到卷曲、变红就盛出。锅底留油，把藕丁和玉米粒倒进去翻炒片刻，再把虾仁倒回去，加一点点盐，快速翻拌均匀就出锅。

你会发现这道菜不用勾芡也不会寡味。**藕的清甜、玉米的多汁、虾仁的Q弹**，三种鲜自己就会打架，然后最后变得很和谐。饭桌上最常见的反馈是：怎么每次吃都觉得很清爽，偏偏还很下饭。

第二道：脆藕青椒牛肉快炒咸鲜香里带着温润

有时候家里谁都想吃“有劲儿的菜”，光清爽不够。那我就会把脆藕和牛肉搭起来。荤素一结合，鲜味立得住，润燥也不耽误。青椒那点清香还能把油腻感压下去，属于那种吃完不想喝凉饮的人。

食材：脆藕、牛里脊、青椒、姜蒜、生抽、淀粉。腌牛肉时要用一点点食用油更容易锁住水分。

牛肉逆着纹理切薄片，加生抽、淀粉、少许食用油抓匀，腌15分钟。莲藕同样去皮切薄片，我会先放到淡醋水里浸泡一会儿，口感和颜色都更稳。青椒切小块备用。

热锅倒油，牛肉下锅大火快炒到变色立刻盛出，别恋战。锅底留油爆香姜蒜，下入藕片翻炒两分钟，看到藕片有点透亮感就加青椒继续翻炒。藕片别炒到太软，微透亮就行。最后把牛肉倒回去，加少许盐调味，大火快速翻匀出锅。

这道菜的关键就一句话：快。牛肉要嫩，藕片要脆爽。你要是嫌麻烦想偷懒，就容易变成“牛肉老、藕片面”。我每次做给家人端上桌，最开心的是看到老人也能夹两筷子牛肉，孩子也愿意把青椒吃掉——不是因为我哄得好，是因为这菜味道确实顺。

第三道：莲藕虾滑小煎饼软嫩鲜香的“万能圈粉”

第三道有点像我给家里人的“偷懒幸福感”。孩子不太爱吃纯粕口感的时候，我就会把藕碎和虾滑组合成小饼。煎一下外面有点香脆，里面又软嫩，蘸点酱油都行，不蘸也有鲜味。

食材：脆藕、鲜虾滑、葱花、鸡蛋、少许淀粉和盐。

莲藕去皮剁成细碎的藕末，尽量挤掉多余水分。不然煎的时候容易塌。藕末放大碗里，加入虾滑、葱花、少许淀粉和一点点盐，打入半个鸡蛋，顺着同一个方向搅拌上劲。这个步骤我会认真一点，搅到黏黏的、能成团的程度，煎出来才好看。wrnwspk.cn
