秋天前吃鲜菜就认这4种，应季不反季，口感清甜，别再花冤枉钱|应季|秋葵|芋头|茭白|莲藕|西红柿|鲜菜

前阵子去菜市场，碰见邻居王婶拎着一兜子西红柿和黄瓜往外走。

我随口问了句“这季节还吃这些呢”，她愣了一下：“超市里一直有啊，想吃就买了。”

这话听着没毛病。现在超市里一年四季什么菜都有，你想吃啥随时能买到。但你有没有发现，反季的西红柿炒出来水唧唧的，黄瓜咬一口寡淡无味，花了同样的钱，吃到的却是“长得像、味道不像”的东西。

老辈人买菜讲“应季而食”，不是穷讲究，是千百年来总结出来的经验。什么季节地里长出什么，身体就需要什么。深秋前后，菜市场里有几样东西正当季，口感最好、营养最足，价格还实在。懂行的人都在抢着买，不懂的人还在盯着那些反季菜花冤枉钱。

今天说四种，都是深秋前后最水灵的。

第一种：茭白

茭白这东西，南方的朋友熟，北方的朋友可能不太熟悉。

它长在水里，剥开一层层的绿壳，里面是白嫩嫩的笋肉，掐一下能出水。

深秋前后的茭白，是一年里口感最好的时候。

九月底才慢慢上市，到十月味道达到顶峰。等过了十一月，茭白里面就空心了，肉质变老发柴，一点鲜味都留不住。所以这东西，吃就吃这几十天，错过就得等明年。

茭白的含水量高达92%左右，热量却只有20来大卡，吃起来一点负担都没有。膳食纤维每100克有2.1克，对肠胃蠕动有帮助。它性味偏凉，秋天燥气重的时候吃它，润燥但不腻。

怎么挑？ 记住三个字——白、直、紧。剥开壳，里面的肉越白净越嫩，发青说明长老了，发黄说明放久了。外形选笔直、粗细均匀的，弯弯曲曲的里面大概率是空的。拿在手里掂一掂，沉甸甸、捏着紧实的才新鲜，轻飘飘一捏就软的是糠了。根部发黑带黑点的千万别买，切开里面全是黑斑。

怎么做？ 茭白有一个很多人踩的坑——直接下锅炒，吃着发涩发硬。茭白草酸含量偏高，不焯水的话涩味很重-。开水里焯30秒到3分钟，捞出来再炒，涩味没了，口感脆甜鲜嫩。

第二种：莲藕

“荷莲一身宝，秋藕最补人”，这话年年说，但真正会吃的人不多。

大部分人买藕就看白不白、嫩不嫩，拿回家才发现——想炖汤的藕怎么炖都不粉，想凉拌的藕怎么拌都发绵。

问题不在藕好不好，在你买错了品种。

莲藕分两大类。

粉藕，也叫七孔藕，外皮偏黄褐色或者暗粉色，身形短粗，淀粉含量高、水分少，炖煮后口感软糯绵密，常说的“藕断丝连”指的就是它。

脆藕，也叫九孔藕，外皮偏米白色，身形细长，水分足、淀粉低，生吃都带脆甜，清炒凉拌最合适。

怎么挑？ 先看外形——短粗的是粉藕，细长的是脆藕。再看颜色——粉藕外皮黄褐或暗粉，脆藕外皮米白或淡黄。别买白得发亮的藕，正常的藕是微黄或米白色的，白得反光可能是被泡过的。

第三种：芋头

芋头在菜市场里堆成山，买的人却不算多。

嫌它没味、嫌削皮手痒、嫌做法麻烦。但它偏偏是深秋前后最该吃的东西之一。

新芋头下来的时候，粉糯的劲头是一年里最足的。蒸出来掰开，粉粉糯糯冒着热气，价格还实在，一两块钱一斤的日子也有。芋头的膳食纤维每100克高达5.77克，比很多蔬菜都高，饱腹感强，拿来替代一部分米饭馒头很合适。钾含量每100克超过300毫克，大约是米饭的10倍。

怎么挑？ 记住几个关键点。

掂重量——同样大小的芋头，选轻的。轻的说明淀粉含量高、水分少，吃起来粉糯；重的水分多，口感偏“生水”，不够粉。

看沙眼——芋头根部有很多凹下去带土的小坑，那就是沙眼。沙眼越多、越密，芋头越粉糯。表面光滑没几个沙眼的，口感一般。

看根部汁液——让摊主用刀在根部划个小口，流出黏稠白色液体、很快干结成粉状的，品质好。选中小个头——比大个的更粉。

第四种：秋葵

秋葵这个东西，喜欢的人很喜欢，不喜欢的人嫌它黏糊糊的。

但那层黏液恰恰是它最值钱的部分。

秋葵黏液里含有果胶和黏蛋白，能附着在胃黏膜上，对胃挺友好的。消化不良的时候吃几根，肚子会舒坦不少。水溶性膳食纤维也丰富，每100克比芹菜高出好几倍，饱腹感强、热量低。
