说到烧烤，很多人最先想到的就是羊肉串。炭火烤制的羊肉串香气扑鼻，肥瘦相间的肉粒外焦里嫩，孜然与辣椒的香气缠绕着羊肉独有的鲜，是夜宵桌上的经典美味。可出门烧烤费时费力，炭火操作也有不少限制，一台空气炸锅，就能在家轻松做出香气浓郁的烤羊肉串，不用起明火，油烟少，做法简单，随时随地都能解锁烧烤摊同款风味。

想要羊肉串好吃，选肉和处理食材是基础。优先挑选肥瘦相间的羊肉，纯瘦肉烤出来容易发干发柴，带一点点脂肪的肉块，烤制后油脂融化，肉质会更加软嫩多汁。把羊肉切成大小均匀的肉丁，每一块都兼顾瘦肉与肥油，肉块不宜过大，不然不容易熟透，太小又容易烤干。切好的羊肉可以倒入料酒抓匀，腌制半小时以上，料酒能够有效去除羊肉的腥膻；如果是新鲜现宰的羊肉，膻味很轻，也可以省去腌制这一步，最大程度保留羊肉原生的肉香。

腌好的羊肉就可以开始串串，这一步决定了烤串的口感层次。准备短竹签，把羊肉肥瘦交替穿插，一块瘦肉搭配一块肥油，肥瘦相间排列。烤制的时候，肥肉受热渗出油脂，会浸润旁边的瘦肉，让整串肉都油润不柴。竹签建议选用10厘米左右的短签，适配空气炸锅狭小的内胆，不会过长卡到机器。穿串不用压得太紧，肉块之间留一点缝隙，热风可以循环穿过，受热更加均匀。

接下来就是空气炸锅烤制的关键步骤。为了防止竹签倾倒，同时多一份配菜，在炸篮底部铺上厚土豆片，把串好的羊肉串竹签末端插在土豆片里，肉串悬空，不会直接贴在炸篮底部，避免局部烤焦。设置180摄氏度，烤制20分钟。烤制到10分钟的时候，把炸篮拉出来，给肉串表面刷一层薄油，翻面继续烘烤，这一步可以锁住肉汁，让外皮烤出焦香之感。
