一到秋天，后台就有人问：要不要贴秋膘？我的回答是：先别急着炖大肉。秋膘贴不好，腰围先知道，脾胃也跟着闹脾气。最近我逛菜市场，最显眼的就是一堆沾着泥的根茎菜：山药、芋头、莲藕、红薯，个个敦实可爱。老话说“秋吃根，赛人参”，这话搁在厨房里特别实在。入秋后多吃4种根茎类食物，避免贴秋膘还能养脾胃。它们价格亲民，蒸煮炖煲都出彩，甜香粉糯，比大鱼大肉更让肠胃舒服。今天就把我家常做的吃法、挑法、避坑点一次讲透。
一、山药：脾胃最爱的“温柔搭子”
秋天买山药，我偏爱铁棍山药，细长、毛须多，蒸熟后粉糯绵密，入口有淡淡栗香。它不抢味，却特别会吸味，跟谁搭都舒服。
我家最常做山药小米粥。小米淘两遍，水开下锅，小火煮到米粒开花，再放山药丁，煮十分钟，米油浓稠，山药绵软，喝一口从嗓子暖到胃里。要是想解馋，就做山药排骨汤：排骨焯水，加姜片小火炖四十分钟，下山药再炖十五分钟，汤色清亮，山药一抿就化，排骨香而不腻。
喜欢甜口的，可以蒸熟压泥，淋无糖酸奶和蓝莓酱，比蛋糕店甜品还治愈。处理山药记得戴手套，不然手痒得跳脚。吃山药时，我会少盛半碗米饭，用它替代部分主食，饱腹感强，还不容易贴秋膘。脾胃弱的时候，蒸着吃、煮粥吃，比生冷凉拌强太多。
二、芋头：粉粉糯糯，主食好替身
芋头是那种“看着土、吃着香”的宝藏。挑荔浦芋头，个头沉、切口白、纹路紫，蒸熟后粉糯香甜，筷子一夹就散。
我最爱芋头蒸排骨。排骨用蒜末、豆豉、生抽、少许淀粉抓匀，腌十分钟，铺在芋头块上，上锅蒸二十五分钟。肉汁往下渗，芋头吸饱酱香，粉糯中带蒜香，比排骨还抢手。秋天想喝汤，就煮芋头青菜汤：芋头煮软，下小青菜，撒点白胡椒，汤浓味鲜，暖胃又舒服。周末有空，还能做芋头糕，芋头丝拌粘米粉、虾米，蒸熟切片煎到两面金黄，外脆里糯。
提醒一句：芋头一定要蒸透，生芋黏液容易刺激皮肤，削皮最好戴手套。芋头碳水不低，吃它就别再猛扒饭，替换半碗主食，才能避免贴秋膘。脾胃喜欢温软，芋头蒸、煮、炖都合适，少油炸、少糖裹。
三、莲藕：秋藕最养人，煲汤清炒都出彩
秋藕上市，脆的粉的都有。记住口诀：七孔粉藕煲汤，九孔脆藕清炒。粉藕短粗，表皮偏黄，炖汤粉糯拉丝；脆藕细长，表皮白净，炒着吃爽脆。
莲藕花生排骨汤，是我家秋天的保留节目。粉藕切滚刀，花生提前泡发，加姜片和排骨，小火煲一小时。汤色微粉，藕块粉糯，花生绵软，喝起来清甜不油腻。熟藕健脾开胃，比凉拌更适合秋天。想快手的，就做酸辣藕片：九孔藕切薄片，泡醋水防黑，热锅爆香蒜片、干辣椒，下藕片快炒，淋米醋、加盐，脆生生酸辣开胃。
糯米藕是好吃，但糖分高，偶尔解馋就行，别当养胃主食天天吃。想养脾胃，莲藕还是熟吃为主，煲汤、炖粥、清炒，少凉拌、少冰镇。挑藕时选表皮完整、无异味的，切开孔洞干净，做出来才清甜。
四、红薯：烤到流蜜，甜香暖手
红薯是秋天街头的香气担当。挑烟薯或蜜薯，细长、表皮光滑，烤到流蜜，焦糖香直往鼻子里钻。烤箱200度烤六十分钟，中间翻面，出炉软糯流心，比甜品还满足。
家里没烤箱，就煮红薯小米粥：红薯丁、小米、几颗红枣，小火煮到开花，甜香自然，不用加糖。或者做红薯银耳羹，银耳提前出胶，红薯煮软，滑溜溜甜滋滋。红薯膳食纤维多，饱腹感强，晚餐用它替代米饭，拳头大小刚好。但胃酸多的别空腹吃，容易反酸。想避免贴秋膘，蒸、烤最好，别油炸、别拔丝、别加糖。脾胃喜欢温暖，红薯趁热吃，细嚼慢咽，舒服又踏实。
怎么吃才不贴秋膘还养脾胃？
一餐选一种根茎，拳头大小，替换部分米饭面条；做法优先蒸、煮、炖、煲，少油炸糖；搭配鸡蛋、豆腐、鱼虾和绿叶菜；趁热吃，别吃撑。这样入秋后多吃4种根茎类食物，避免贴秋膘还能养脾胃，真不是空话。
