吃饭没胃口？试试这 6 道经典家常菜，好吃到光盘，妥妥的干饭神器|光盘|包菜|十大硬菜|家常菜|干饭|米饭|肉片|茄子|豆腐

不知道大家有没有这种体验，明明已经到饭点，肚子也有点饿，可看着桌上饭菜，就是提不起吃东西的欲望。随便扒拉两口米饭，就不想继续吃。很多时候不是身体哪里不舒服，就是餐桌上缺少一道能调动味蕾的下饭菜。

不见得要多昂贵的食材，也不用复杂的烹饪手艺。下面这 6 道流传很久的家常菜，荤素搭配，味道层次丰富，家里普通燃气灶就可以搞定。我会顺带把实操里面容易踩的小问题也说出来，厨房新手也可以照着尝试。

第一道，鱼香肉丝

这道菜算是下饭界的老面孔，酸甜咸辣几种味道融合在一起，汤汁拌米饭特别香。很多人在家做容易翻车，味道要么太酸，要么甜味过重。其实最省事的办法，提前把所有调料兑成一碗料汁，下锅直接倒进去，不用炒菜的时候手忙脚乱放调料。

瘦肉切成细丝，简单腌制一会，木耳、胡萝卜、笋丝备好。肉丝滑炒盛出，再把配菜翻炒，倒入调好的碗汁，最后把肉丝倒回锅里翻匀就出锅。木耳记得提前充分泡发，炒制时间不用太久，炒太久口感会发硬。不喜欢吃笋，也可以换成别的配菜灵活替换。

第二道，肉末茄子

茄子本身没什么味道，但特别善于吸附汤汁，做好之后软乎乎的，拌米饭特别过瘾。很多家庭做法会放很多油，吃起来油腻，这里分享少油版本。茄子切成长条，用盐抓一下，静置一会，析出一部分水分，后续烹饪就不会疯狂吸油。

锅里炒香肉末，放姜蒜和少量豆瓣酱炒出红油，再下入茄子，加少量清水盖上锅盖稍微焖几分钟。焖到茄子变软熟透，简单调味就可以出锅。不要焖煮时间过长，不然茄子直接化成糊糊，卖相和口感都会大打折扣。

第三道，酸辣手撕包菜

不想做荤菜的时候，这道素菜就是首选，十几分钟就能端上桌。切记不要切成细丝，直接用手把包菜撕成大小不一的片状，口感会比刀切的更好。这道菜的灵魂是大火快炒，全程保持大火，不要盖锅盖。

锅里热油，爆香干辣椒和蒜末，倒入包菜快速翻炒，等到菜叶微微变软，再淋入香醋和生抽。醋不要放太早，放太早酸味挥发掉，吃不出酸辣的口感。不吃辣的朋友，可以直接去掉干辣椒，做咸香版本，同样很好吃。

第四道，葱烧嫩豆腐

口味相对温和，不会过于刺激，家里老人小孩都适合。豆腐很容易破碎，下锅之后不要拿着锅铲来回使劲翻炒。豆腐切成方块，锅里少油，两面稍微煎到微黄，加入葱段，少量清水，放生抽、蚝油简单调味，盖上锅盖小火焖上几分钟，让豆腐慢慢吸满汤汁。

出锅前轻轻翻拌两下就可以，豆腐吸饱汤汁，吃起来软嫩入味。担心豆腐易碎，也可以焯水之后再下锅，能增加豆腐的韧性。

第五道，柠檬手撕鸡

没有胃口的时候，一道冷菜往往更能打开食欲。鸡肉煮熟之后，不要立刻捞出来，关火放在汤里面焖上十多分钟，肉质会更加鲜嫩，不会干柴。放凉之后用手撕成小块，不要用刀切，手撕的纹理更容易挂住料汁。

柠檬汁、蒜末、小米辣、生抽、少许糖调配酱汁，浇在鸡肉上面，撒上香菜拌匀。酸度辣度完全可以按照自己的喜好调整。夏天吃很清爽，就算是秋冬，想吃点开胃小菜，做它也合适。

第六道，青椒炒肉片

最朴实无华的一道家常菜，没有花哨的配料，却百吃不厌。猪肉切片，简单用生抽、淀粉抓匀腌制，炒出来肉片会更滑嫩。油热之后先把肉片炒到变色盛出来，再炒青椒。

青椒不要炒得软塌塌，保留一点点脆感，口感最佳。再把肉片倒回锅，简单调味快速翻匀就出锅。不要长时间炖煮，肉片炒老之后，吃起来又硬又柴。
