太谷饼传统制作技艺选料非常讲究，坚持选用高山全胚芽的原粒小麦；坚持选用颗粒饱满、含油量高的农家自熟白芝麻；坚持选用山野放养的花酿蜂蜜，再以传统碱面发酵；工艺复杂而独特，主要工序为：配料、和面、揉面、制饼、烫面、翻烤，六大工艺流程，每一道工艺流程都十分考究，这样才成就出太谷饼的本真原香。

太谷饼是山西省太谷县独特的传统名产食品，它以香、酥、甜、软的特点而久负盛名。

Product Features

The traditional craftsmanship of making Taigu cakes emphasizes the selection of ingredients, insisting on using high mountain full germ original grain wheat, selecting naturally-ripe white sesame seeds with full particles and high oil content from rural areas and using flower-brewed honey from wild and mountainous areas, and then ferment it with traditional alkaline flour. There are six processes involved in making Taigu cakes: preparing ingredients, dough mixing, kneading, cake making, heating dough, and baking. Each process is meticulously crafted to achieve the authentic fragrance of Taigu cake.

Taigu cake is a unique traditional specialty food in Taigu County, Shanxi Province. It has long been renowned for its fragrant, crispy, sweet, and soft characteristics.

人文历史

太谷饼因产于太谷县（2020年改为太谷区）而得名，原名叫“油甘饼”，始于明末清初，历史悠久，民间流传有很多逸事。据史料记载，太谷饼早在清乾隆年间，时任直隶总督的清朝大吏温成慧（太谷县白城人）作为地方名吃带入北京，赠与皇亲国戚，达官好友。

清翰林院大学士纪晓岚享用后，赞誉之词写入其名著《阅微草堂笔记》后记中；清光绪二十六年（1900年），八国联军逼近北京，慈禧太后携光绪帝西逃途径太原，在各地方官吏献上的众多名吃特产中，慈禧唯独钟情太谷饼，并封为宫廷贡品，有诗云：国运艰难驾西迁，风餐露宿苦难言；幸遇太谷甘甜饼，餐餐御点现欢颜。

著名歌唱家郭兰英演唱的一首《夸土产》的山西民歌中，第一句就是“平遥的牛肉，太谷的饼”。

Humanistic History

Taigu cake is named after its origin in Taigu County (renamed as Taigu District in 2020) and was originally named “Yougan cake”. Taigu cake originated in the turn of Ming and Qing Dynasties, with a long history and many anecdotes passed down. According to historical records, as early as the Qianlong period of the Qing Dynasty, Wen Chenghui (from Baicheng, Taigu County), who was then the Viceroy of Zhili, brought Taigu cake to Beijing as a local delicacy and presented it to the royal household and his friends.

After enjoying it, Ji Xiaolan, the Grand Secretariat of the Hanlin Academy, wrote praises in the postscript of his famous work Jottings from the Thatched Abode of Close Observations; In the 26th year of the Guangxu reign of the Qing Dynasty (1900), the Eight-Nation Alliance approached Beijing. Empress Dowager Cixi fled westward with Emperor Guangxu, passing through Taiyuan. Among the many famous specialties offered, Cixi only had a fondness for Taigu cakes and conferred the title of Taigu cake as a tribute to the court. There is a poem that goes: The national fortune was difficult, and the royal family moved westward in a disheveled manner. Fortunately, they encountered Taigu Cake, which made them be delighted.

The first line of a Shanxi folk song sung by famous singer Guo Lanying, "Praising Local specialties," is "The beef of Pingyao, the cake of Taigu.".

产地环境

太谷区位于山西省晋中盆地东北部，地理坐标介于东经112°28’～113°01’，北纬37°12’～37°32’之间，总面积1050平方千米，属于暖温带大陆性气候，区内四季分明；平均气温小于10℃为冬季，大于22℃为夏季，10℃-22℃之间为春季、秋季；冬季少雪干冷，夏季炎热多雨，秋季秋高气爽，春季干旱多风。

保护范围为太谷县（区）明星镇、侯城乡、北洸乡、水秀乡、胡村镇、小白乡、阳邑乡、任村乡、范村镇9个乡镇现辖行政区域。

Origin environment

Taigu District is located in the northeast of Jinzhong Basin, Shanxi Province, with geographical coordinates ranging from 112 ° 28 ’E to 113 ° 01’ E and 37 ° 12 ’N to 37 ° 32’N. The total area is 1050 square kilometers. Taigu belongs to warm temperate continental climate, with distinct four seasons. In Taigu, the average temperature in winter is less than 10 ℃, in summer exceeds 22 ℃, and in spring and autumn is between 10 ℃ and 22 ℃. Winter is less snowy, dry and cold, summer is hot and rainy, autumn is cool and invigorating, and spring is dry and windy.

The protection scope of Taigu cake covers the administrative areas of 9 townships in Taigu County (District), including Mingxing Town, Houcheng Township, Beiguang Township, Shuixiu Township, Hucun Town, Xiaobai Township, Yangyi Township, Rencun Township, and Fancun Town.

产业发展

太谷饼企业以“诚信为本，饼通天下”，将传统的太谷美食经营到了全国各地。2007年太谷饼开始创新开辟线上销售之路，与多方电商平台合作拓展，将太谷饼销往全国各地。2022年度产量一万四千余吨，产值达两千亿余元。

近年来，太谷饼地标企业分别被列入山西省非物质文化遗产名录、被山西省商务厅认定为“三晋老字号”、成为省级非物质文化遗产保护项目、成为首批商务部认定的“中华老字号”。这些企业依靠诚实守信的精神，树立了良好的企业信誉和产品信誉，获得了更大、更长远的利益，推进了诚信体系建设，促进了社会主义市场经济健康发展。

Industry Development

Taigu cake enterprises, with the principle of "integrity-based and cake accessible to the world", have spread traditional Taigu cuisine to various parts of China. In 2007, Taigu cake enterprises began to innovate and open up online sales channels, collaborating with various e-commerce platforms to sell Taigu cake to the whole China. In 2022, the production of Taigu cake was more than 14000 tons, with an output value of over 200 billion yuan.

In recent years, the geographical indication enterprises of Taigu cake have been included in the list of intangible cultural heritage in Shanxi Province, recognized as “Shanxi Time-honored Brand” by the Shanxi Provincial Department of Commerce, and have become provincial-level intangible cultural heritage protection projects. They have also been listed as one of the first “Chinese Time-honored Brands”recognized by the Ministry of Commerce. These enterprises, relying on the spirit of honesty and trustworthiness, have established a good corporate and product reputation, obtained greater and longer-term benefits, promoted the construction of an integrity system, and promoted the healthy development of the socialist market economy.
