川味麻辣风干兔丁的做法
- 这是一只干瘪的风干兔子
- 冷水泡1天,如果是夏天,放冰箱冷藏
- 泡好的兔子,有点发白
- 剁成小块
- 淘洗掉血水
- 冷水入锅,焯水10分钟,锅里加入生姜、葱段、八角、香叶、料酒
- 焯水完成,捞出备用
- 热锅凉油30克
- 小火煸炒以上料头:干红辣椒(二荆条)、小米辣、青麻椒、蒜末、葱段、姜片
- 下入兔子丁,爆炒到水分蒸发掉(大约3分钟)
- 加入生抽30克,料酒30克,继续爆炒到水分蒸发掉(大约3分钟)
