紫米和咸蛋黄才是完美搭配~超好吃的紫米咸蛋黄流沙包的做法
- 黄油室温软化到手指可以轻松按出坑,加入细砂糖和奶粉,用刮刀压拌均匀。
- 分次加入室温牛奶,拌至顺滑。
- 咸蛋黄提前蒸熟后压碎,不用太细,有点颗粒口感更好,加入黄油糊里拌匀。
- 将黄油糊分成均等的16份,每份约15克,送入冰箱冷冻至稍硬,取出搓圆。
- 将紫米馅也分成16份,每份20克,取一个紫米馅,拍扁,中间放入咸蛋黄馅。一定要全程带手套,否则很粘手。
- 如图,先反扣下去,推圆后再翻上来,用虎口慢慢往上收。
- 依次包好所有紫米咸蛋黄馅,放冰箱冷藏备用。
- 取菠菜叶子100克,焯烫后捞出,加干净水至总重200克,用料理机打成泥汁,取180克备用。

- 新鲜酵母溶于菠菜泥汁,加吐司粉揉成基本光滑的面团。
- 面团放入不粘容器,拍扁,放发酵箱,设置温度28湿度80,发3到4倍大。
- 发好的面团取出,拍扁。
- 主面团中除黄油之外的所有材料放入面缸,中种面团剪成小块也放入面缸,后油法揉至扩展阶段。
- 可以拉出大片、有韧性的薄膜就可以了。
- 将面团滚圆,放入发酵箱松弛20分钟,没有发酵箱的要盖好湿布,防止表皮风干。请忽略那个小面团,不造型了。
- 松弛好的面团轻轻拍扁,不要过度排气,分成16个均等的小面团。请忽略右上角预留造型的面团。
- 按自己喜欢的方式滚圆,松弛15分钟。滚圆的目的是让面团紧实并有一个光滑的表面,这样最后烘烤出来的面包才光滑细腻。
- 手指拍少许高粉,取一个松弛好的面团,轻轻拍扁,翻面,放入紫米咸蛋黄馅。
- 用虎口转圈将皮往上拢,最后捏紧收口,放入模具,包汤圆、月饼以及蛋黄酥都是类似的手法。
我用的是酷新怡8寸加高正方模。
- 将所有面团包好后,放入发酵箱,设置温度32湿度75,发至1.5到2倍大。没有发酵箱的,放温暖湿润处,温度不可太高,否则里面的黄油馅会溶化。
- 送入预热好的烤箱最下层,上下管180度,烤约35分钟。时间和温度根据自己的烤箱调整。
