- 先准备鸭腿洗净。
- 把鸭腿或整只鸭切成小块备用。
- 准备葱姜蒜,八角、花椒粒、桂皮、香叶、草果、白芷。
- 将土豆去皮切成小块,在冷水中泡着。
- 准备香菇洗净,锅中烧开水焯水一分钟,过凉水控干水分备用,如果家里有红蘑和榛蘑更好了,需要提前两个小时泡发。
- 锅中放入多一点的水,放入葱姜,放料酒,放鸭肉放到锅内,锅开后焯水一分钟捞出,过凉水控干水分备用。
- 炒锅内放入适量的油,放入郫县豆瓣酱,小火炒出红油。
