新手自制冰淇淋,一次成功的做法
- 准备好食材,打蛋器。
所有容器,打蛋器无油无水。
淡奶油用的时候再准备。
- 蛋黄内加入10克糖,挤几滴柠檬汁,打发至颜色变浅,然后放盐。
- 牛奶小火熬至微微冒泡,趁热倒进蛋黄液,快速搅拌。
混合后的液体很稀。稀度看视频。
- 然后再小火加热,要不停的搅拌,以免糊锅,加热到稍微变粘稠即可。放凉。
加热可能会导致有小小的颗粒感,不要紧,后边步骤再打一下即可。
- 然后把放凉的蛋黄糊倒入奶油盆,搅拌均匀。再用打蛋器打一下,这样蛋黄糊内的小颗粒会被打掉。
- 加入蔓越莓碎,搅拌均匀。
- 装入无油无水的玻璃容器,密封,放冰箱冷冻。没错,是冷冻!
- 冻上五六个小时,变成冰淇淋啦!
- 赶紧挖一勺!
- 口感细腻爽滑!
